Sweetened Condensed Milk?? Any substitutes?

Any way to make this low carb? Anyone have any ideas for a substitute?

here's one from low carb luxury's site
Low Carb Sweetened
Condensed Milk
Ingredients:
2 1/2 cups heavy whipping cream
6 egg yolks
1 cup Splenda
2 Tbsp DiabetiSweet (optional)

Whisk all ingredients (added in the order given) in a saucepan over low heat, stirring constantly until thickened. Cool completely, add to sealable non-metal container and refrigerate. Use within 7-10 days.

This mixture is useful in any recipe where you'd ordinarily use sweetened condensed milk (like Eagle Brand.) Using the Diabetisweet adds less than 1 carb per serving but aids in proper consistency, however, it will still be delicious without it. Depending on your plans to use it, adding a bit of vanilla after cooking can be a nice touch.

Makes approx 1 1/2 pints. 40 carbs in entire recipe; 4 grams per 1/4 cup serving.

Hey, PammyJo - let us know how that Low Carb Luxury recipe works out. I have a coconut cream tart recipe I've wanted to modify for low carb dessert - but haven't worked my way around the sweetened condensed milk issue. Today I finally searched the Web for it, and there it was on the Low Carb Luxury site. If the SCM low carb version works for you, I'll post the coconut tart after it's had a test drive at home.

I buy a product by Nestle ~ canned "table cream". This has the consistency of condensed milk (very thick), however it is not sweetened. It comes in an 8oz can, with a light blue wrapper. I'm able to find it in WA state in grocery stores that have a large Mexican food aisle.

To be honest - I'm not familiar with carb counts, so please look at the label info. Its ingredients are: light cream, carageenan, sodium alginate, disodium phosphate. It states serving size of 1 tablespoon at less than 1g carbs. 16 servings per can. *Ü*

Pammyjo I had a can of the nestles table cream in the pantry. I was making macaroons that needed some more moisture. I added the can to the recipe and it did the trick. I had already sweetened the recipe and added just a pinch more sweetener . WOrked great.

I know i saw SOMEWHERE how much sugar to add to make this condensed milk. Wish i remember where it was!

ok went to my mastercook substitution list. It lists milk and sugar as the substitute with ratio of 1 cup of milk to one cup of sugar.

so if we used 1 cup of nestles cream and and 1 cup of milk , it should be about the same... worth a try
