Awful mistake that turned out FANTASTIC
There was a post under eggplant rollups, that gave credit to a particular web site, which I went to and discovered a microwave toffee recipe that I thought would be easy to LC. Ha. This is the recipe:
Microwave Toffee 3/4 cups chopped pecans 1 cup sugar( iused e and splenda) 1/4 cup water 1/2 cup butter (1 stick) 3/4 cup semi sweet chocolate chips ( I used splenda sweetened) 1 buttered baking sheet. sprinkle 1/2 cup pecans on circle on baking sheet. In a microwave safe dish put inthe butter, salt, sugar and water. DO NOT STIR. Check it alfter 7 minutes, cooking until mixture just begins to turn tan. DON'T STIR. Mine never did get to a tan. Perhaps the sugar. Pour the mixture ofer the top of your pecans and immediately sprnkle the chocolate chips on top and let sit for one minute. Use spatual to spread the morsels out. Sprinkle the remaining pecans over the top and pop the sheet into the fridge to cool. Break into bite size pieces. Well, my batter never turned tan, so I poured the stuff over the pecans, and it looked horrible, with butter congealing al over. I was about to throw it out when I decided t add some almond meal, and them some coconut meal. Oh my gosh, these taste like "haystacks". Remember them.. Anyway kids GKs and Dh went nuts over them and made me swear I would make these again... Oh by the way, after adding the meals, I rolled them into balls and put in fridge, covered. Must say this was a MISTAKE GONE GOOD.. Great Christmas candy. Julie |

OH WOW!!! Thanks for sharing this recipe blooper! Lucky me, I have all the ingredients and I'll make these candies right now.

I know you were just "adding" stuff..........but what would you estimate were the amounts of the almond meal and coconut??

Well, I'm going to estimate 3/4 cup almond flour, and 1/3 cup coconut flour. But, just keep adding until its thick, then roll them in a ball and put in the fridge. Unfortunately, my DH just can't stop eating them.

Splenda doesn't caramelize like sugar does, hence the problem you had with waiting for it to turn color!
Erythritol DOES caramelize, but doesn't seem to brown as much as real sugar does. Plus, it has that "cooling effect" so it IS better mixed with another sweetener. I am patiently (NOT) awaiting my orders of DiabetiSweet, brown and regular, because I've read that it DOES act "just like sugar" so I'm anxious to try it. I've used erythritol in my fudge recipe and did get it to cook to a soft-ball stage - and that cooling effect was actually rather pleasant in the fudge, I thought - even DH who is NOT a lover of chocolate really liked it! It's great that you made a happy accident out of it though - I sure hate wasting expensive ingredients! Char

I used 1/2 Debbiesweet and 1/2 Whey low, so I thought that would work, but no cigar. Oh, well, this was probably better anyway.
