Crock pot roast help!
Ok, so I grew up eating the recipe everyone is soooo familiar with...roast cooked in Lipton's onion soup mix and Campbell's Cream of Mushroom soup. I have been approximating it for LC with one envelope of Carb Options french onion, and one envelope of Carb Options cream of mushroom.
Well, I bought the roast, but forgot to buy the soup mixes...not gonna run back to the store. I do have a single envelope of the CO french onion on hand. Should I just use that by itself? Or does someone have a suggestion of something tasty to add? Or skip the soup mix alltogether and try different stuff with it? Anyone have another good crockpot roast recipe? Thanks, y'all!!!

I always just put in a little water, some bay leaves, chunks of real onions, garlic, etc.

Sometimes simple is the absolute best. I like to just rub my roast with olive oil and spices (savory is one of my favorites, but I also like a blend, like Montreal Steak Spice). I sear it on all sides in a hot pan, then put the roast in the crock pot. Add a bit of water to the brown bits and deglace the pan, and pour those lovely juices over the meat. Cover and cook. Ready when you are! The pan juices are lovely and can be thickend with Xanthan gum, or even carb quick if you have it. For a change, thicken with cream or sour cream. Yummy.

I just made one 2 weeks ago with a packet of the dry onion soup mix and a 12 ounce Miller Lite (low carb) beer and some dried mushrooms, reconstituted before adding to the crockpot. It came out AWESOME!
The mushrooms were an afterthought so if you don't have them, add a can of mushrooms or just skip 'em altogether. The broth was so good that I made onion soup out of what was left over! Char |
