Start Date: 1-27-03 Lost over a 100 pounds
What did I do wrong?

Made the easy peanut butter cookies:

1 cup sf peanut butter
1 cup almond flour
1 cup liquid splenda or equiv. I used Stevia
1 egg

mix all together put on ungreased pan and back at 350 for 20 minutes.

They turned out terrible, they look good but no flavor at all I mean non. What did I do wrong?

It was probably the stevia, especially a large amount. Maybe try using 1/2 as much? Or 1/2 stevia and 1/2 davincis or something?

Thank you Dottie I was wondering if the sf syrup would be better, maybe choc would be good, but it is suppose to be 1 cup liguid right? not powder sweetner? And is the rest of the recipe right?

I have never used stevia so I don't know what that is like. but I have made this recipe several times and i love it. Tastes great (although a bit crumbly). I use liquid splenda. I wouldn't think that the stivia would make it have no flavor at all.

The original recipe in the recipe room (EZ peanut butter cookies)called for just the peanut butter, splanda (I assumed granular) and an egg. I modified the recipe to include the almond flour to add bulk that I would be missing from the granular splenda.

I am sorry it didn't turn out so well for you.

Yo-Yo, thank you for the reply I think it was the stevia because I had to make it myself, I could not find liquid splenda I used 1 tsp of stevia in one cup of water I even tasted it on my finger it tasted sweet but then again I don't like real sweet, the cookies look good and have good texture just no flavor. I am going to try it again with sf syrup they were really easy. Oh I did have to spray the pan though the first batch stuck.

Are you sure it's a cup of liquid splenda? - you mean Splenda Granular, I think.

I'm wondering

If a shake or 2 of salt might help bring out the nut flavor. I have almost quit trying to make p-nut butter cookies. The s/f nut butter just does not seem to have enough taste to it.

yes. In the recipe I made with the almond flour I used 1 cup equivilant of liquid splend (as I recall it was actually 1.5 tsp)

The original recipe I believe called for one cup granular and no almond flour.

So sorry it was just me not your cookie recipe, my son tried them and liked them and he does not do low carb, go figure I guess I was just exspecting something different all though I have no idea what it might be...lol

I am not a big cookie person to begin with I wanted them for company and now that I know they are fine I will serve them, thanks for the recipe, sorry for the confussion.

your right Jaideyes. I didn't notice that before. That is alot of liquid. Mine only had 1.5 tsp of liquid splenda equivilant of one cup and the moisture of the egg.

I probably was not clear on the amounts.

Adding almond flour dilutes the taste of the peanut butter without adding any sugar/splenda like bulking properties.
