The Best Clam Chowder...

I mad the best clam chowder last night. I used my old recipe and used celery root as the potatoes. Oh my gosh. this makes a ton, but I was never able to make a small pot of soup.

Julie's Clam Chowder

3lb 3 oz can of chopped clams (Costco)
2 large (a little bigger than a large softball) cellery root
1 stick of butter
1 onion
1 small bottle clam juice
cream
thick and thin not thickener
1 lb bacon, chopped

Fry bacon peices until crisp and tke out of grease and hold for later. Hide them from the kids.

Chop onions and dice celery root into small chuncks of "potatoes"
Drain the clams, reserving all of the juice.
Put onions and celery root into bacon grease, and fry until onion is just soft. Add the reserved clam juice.
Simmer until celery root is just barely tender.
Throw in the butter and cream, I probably used 2-3 cups, but enough to cover the vegtable and begin to make a soup like consistency.
Add the bottle of clam juice and the bacon
Add salt and pepper to taste Add a few big shakes of Tabasco.
Using a masher, mash some of the celery root, leaving lots of chunks.
Add thick and thin 1 tsp at a time, until disired consistency.
Simmer until all the flovors are melded together.

Mmmm, I have missed Clam Chowder. I used to order it frequently at Red Robin's (it is outstanding) but no more. Thanks for posting this recipe.

Thank you Julie for sharing your recipe! I've got 3 cans of the Costco clams, but wasn't happy with my current recipe (uses cauliflower for the potatoes).

I'll definitely give your recipe a try!! *Ü*

Julie yours looks similar to mine, I just freeze the rest


Clam Chowder

1/2 cup chopped white onion
3 tbsp chopped garlic ( in jar)
1 celery chopped
cooked cauliflower (bite size) about 1/2 a small head is what I use
1 can chicken broth
1 bottle clam juice
2 cans clams
1 stick butter......yes a whole stick ;-)
2 cups heavy cream
4 crumbled pieces bacon
salt and pepper to taste
Xathan gum 3-5 shakes .....Whole foods has this thickener in spice size jars

Sauté first 3 ingredients in bacon grease (made from 4 slices crisp bacon) until tender, add can of chicken broth,clam juices from clams plus 1 bottle of clam juice simmer for 5 minutes.

Then add 1 stick butter, 2 cups heavy cream, cooked cauliflower,crumbled bacon, salt and ground pepper (lots) of pepper, then simmer on low for 10 more minutes, add the clams last and Xathan gum, simmer. It won't look thick right away so DON'T think you need to add more gum, because you don't.

I also use cauliflower in mine but not the "flower" part - I just use the stems, diced to look like potatoes.

I will try the celeriac though, I've never cooked it before so it will be fun to 'speriment!

Around here I gotta keep the fried bacon away from the DH - no kids to contend with!

I use turnips in mine and they taste just like potatoes. Even my non low carb DH loves it.
