Thanks all for the tips
I made this again yesterday (without the liq. smoke for now!) and it was MUCH better... I just cooked it at a slightly higher heat, a little longer, and the sauce DID thicken up. I though the taste was great, and I had a leftover piece today (cold) and it was also great. YAY!
thanks for this great recipe- |

I used this Friday night on Chicken breast...Didn't have but a 1/2 cup lowcarb catsup so I put 1/2 cup low card BBQ sauce with it and the 80Z dietrite... My husband, who loves BBQ and is not lowcarbing just loved it! He is already asking that I BBQ sauce something else.

made this tonight...omg! I did add the tblsp of worschishire and mustard, and some onion flakes (i would leave those out next time..too overpowering)..pretty much had the flavor of baked beans. I accidently BOILED the chicken in the sauce for 30 minutes and then reduced the liquids for about 15 on medium. My hubby said "this actually tastes really good" (back handed compliment lol) but my son is the one i couldnt believe! He is the pickiest eater EVER. He even hates mcdonalds...and he had 2 helpings!

I tried this long ago and found it to be much too sweet. Decided to try again but this time I subbed a 10 oz. can of rotel diced tomatoes for the lc ketchup (much less carbs)...added 2 tsp. of liquid smoke and a little seasoning salt...LOVED IT!! The sauce thickened up really well (had to remove the chicken & boil it about 30 minutes) Perhaps others may find this version more to their liking as well.

Way too much time on my hands!

So many people have asked for my barbecue sauce recipe lately.
It's a little like the cola recipe, that's why I'm posting it on this thead. You can use any LC catsup you have; I just use Bruce's recipe because I'm not a catsup snob; pre-lowcarb, I could buy a bottle a year, and in five years, I would still have four full bottles, and part of another one. * Exported from MasterCook * BBQ Sauce Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 can Diet Rite cola 1 1/2 cups Bruce's Catsup 2 Tablespoons onion powder 1/4 cup cider vinegar 1/4 cup Worcestershire sauce 1 teaspoon chili powder 1 teaspoon salt 1 teaspoon liquid Smoke flavoring 1 Tablespoon ThickenThin not/Starch hot pepper sauce -- if desired In a medium saucepan, combine all ingredients. Bring to a boil. Reduce heat to medium-low and simmer, covered, for 30- 45 minutes, or until sauce is thickened, stirring occasionally. Hmmm you've got me thinking now. I've never made this before but do you think the sauce would be good with black soybeans? Like baked beans? I miss my baked beans!! |

We had this for dinner tonight, our first time.
I used 6 thighs with the skin left on. Cooked them in the slow cooker on high for 1 to 1 1/2 hours then drained the broth from the chicken (to use in other recipes) and added 1/2 c. unsweetened ketchup (from Whole foods, can't get the LC here anymore), 6 ounces Diet Rite and a sprinkle of both garlic and onion powder, back on high heat for about another hour. The sauce thickened just fine. We both liked it and have leftovers for another meal. Was slightly sweet, not overly, because of the lack of sweetener in the ketchup. Dh says the sauce is just perfect the way it is. I had thought about adding some vinegar and chili powder like my mom did in her sauce when we were kids. Might try it sometime. |

OMG! This recipe is AMAZING! I used the original recipe (no tweeks) from page 1 and it was great! So good that I am making it for my DD's 1st birthday party in 2 weeks.
My sauce was thickening up, but I like thick sauce, so I did use 1/2 tsp. of xanthan gum. I used boneless chicken cutlets and they were falling apart b/c they were so tender. I used the Heniz 1 carb catsup. This is going to be a weekly staple in our house. Thanks Cheri! I'm so happy this old post found it's way back to page 1. ![]()

DIVABUNNY, yes, the "sauce" portion of the recipe would maje EXCELLENT baked beans!!!! After I made cola chicken (per my tweak above) I scraped up about 2/3 cup of leftover sauce and added it to a pot of dry black organic soybeans I was cooking up the next day. (dang, those little boogers took over 3 hrs to soften up!) They were the best tasting pot of beans I've ever eaten!! (also added a few slices of lean bacon, chopped garlic, onion, bell pepper & spices)...the whole family raved about the beans. I'll make them again (much easier to just use the rinsed & drained canned Eden black soy beans, but I still have a few pounds left of the dry ones to finish up) I'd added a little brown Diabetisweet (or lc pancake syrup), mustard, and liquid smoke....You will not be dissappointed!!

I would add a little soda but you know... it might be even thicker and not a problem. The only thing is you will have less of the bbq sauce... I usually have to boil it longer to get it to thicken up so adding the rest of the soda now shouldn't be a problem.
Let me know what you think of it! |

Just took it off the stove, and it was thick enough for me, in fact perfect. I had thwon in a few shakes of minced onion and another splash of soda and a few splashes of liquid smoke and I really like it. Actually made it for DH's dinner tomorrow night (he works nights) and a piece for me to take to work tomorrow. Thanks for a great recipe. |
