Pork Hocks
How should I cook my pork hocks that I have in my freezer?
I was going to put them in the crockpot and then put sauerkraut on them. I'm just not sure how long to cook them (overnight on low???) Any ideas/recipes??? |

I boil them in a pot of water on the stove until the meat is ready to fall off the bone. Take them out of the pot and remove the meat from the bone and return to the pot. Quarter 1 head of cabbage and add to the pot and cook until the cabbage is done.

HI,
I used to make "headcheese" for my grandpa with pork hocks. I'd boil them with a bay leaf, salt and pepper until they were falling off the bone. Then I strainthem saving the borth. Put the borth back into the pot and add a grated onion and the meat from the bones. Cook longer until most of the borth is boiled down. The put into a greased loaf pan and refriigerate until set. I used to add bread crumb to it too before putting into loaf pan but you can skip that to lowcarb. Just slice and eat cold. the both in enough to gel it. Bernie |
