Dr. Pepper Cake
Well here is the recipe some of you have asked for. My daughter actually made it and said it was a little time consuming but it was very good and froze well in individual peices.
Dr. Pepper Cake 1 1/2 c. cake-ability 1 c. almond flour 1 c. granular splenda ( she used 1/2 gran. and equiv. to 1/2 liq. splenda) 1/4 c. Diabetisweet (she used equiv. to with liquid splenda) 1 TBS. baking powder 1 1/2 tsp cinnamon 4 TBS unsweetened cocoa powder 1/2 tsp. salt 8 large egg whites 1/2 tsp. cream of tartar 3/4 c. cold diet Dr. Pepper 2 TBS buttermilk 4 large egg yolks 1/3 c. oil 2 tsp. vanilla extract Grease and flour 8 or 9 in. round pans (2). Oven to 325 Sift cake-ability, almond flour, splenda, Diabetisweet, baking powder, cocoa, cinnamon and salt. Set aside. Whip egg whites until soft peaks form. Pause and sprinkle cream of tartar over the egg whites, then continue beating until stiff peaks form. Mix diet Dr. Pepper w/egg yolks and whisk well. Add oil, buttermilk and vanilla. Add egg yolk mixture to flour mixture and beat until smooth. Add 1/2 the egg whites to the batter mix and beat again until well blended (no more than 1 minute). Then carefully add batter to remainder of egg whites and mix in gently using a rubber spatula, being careful not to breakdown whites, until batter is fully incorperated. Pour into pans evenly and bake for 20 to 30 minutes, turning 1/2 way through. Cool 10 mintues before removing from pans. Cool on racks. Essemble with favorite frosting. Cream Cheese Frosting 4 oz. cream cheese 1/2 c. softened butter 1/2 tsp. vanilla 1/2 c. splenda 1/2 c. heavy whipping cream

I put this in MasterCook; just arbitrarily chose 1/12 of the recipe as the serving size: 401 Calories; 25g Fat (53.8% calories from fat); 24g Protein; 23g Carbohydrate; 11g Dietary Fiber; 116mg Cholesterol; 1040mg Sodium Then I did it again without the Splenda (for those who use liquid Splenda) and without Diabetisweet (for those who deduct sugar alcohols): 380 Calories; 25g Fat (58.0% calories from fat); 24g Protein; 16g Carbohydrate; 11g Dietary Fiber; 116mg Cholesterol; 1040mg Sodium |

My daughter wrote down that 1/16th was 6gm and 1/12 was 8gm but she did not use diabetisweet and only 1/2 gran. splenda and the rest with liq. splenda. We don't have Mastercook though and I am sure she figured net. |
