You could make my favorite food in the world.
Stewed Okra and Tomatoes Ingredients: 1 Small onion, chopped 2 C Okra 1 14-½ oz. can chopped tomatoes with juice 2 T Bacon grease ½ t Salt Freshly ground black pepper to taste Directions: In a saucepan or sauté pan with a close-fitting lid, sauté the onion in the bacon grease over medium heat until softened, not browned. Reduce the heat to low, and stir in the okra and tomatoes. Add the salt, cover and simmer for 30 minutes. Remove from heat and stir in the pepper. Makes about 4 servings. |

This is my daughter's favorite, I have to make it for her on her birthday and any other reason she can come up with.
Seafood Gumbo 3 tablespoons olive oil-0 8 cloves garlic (minced)-7.9 2 large onions (chopped)-25.9 1 large bell pepper (chopped)-7.2 4 large ribs celery (chopped)-3.1 2-14oz cans diced tomatoes-16.6 1-8oz can tomato sauce-16.3 2-10oz packages frozen okra-43.3 1 bunch parsley ~leaves only~ (chopped)-3.8 1 bunch green onions (chopped)-8 2 tablespoons chicken bullion-6.8 1 tablespoon liquid crab boil-0 1 gallon water 2 lb. Shrimp ~peeled & devained -0 1 lb. Small scallops-9.1 2 lb. Frozen ~meat only~ craw fish tails-0 2 lb. Mild flavored white fish (chopped in 1 in. cubes)-0 In a large gumbo pot heat the olive oil and saute the onion, bell pepper, and celery until they are tender. Add the garlic and saute until you start to smell it. Add the tomatoes, parsley, green onions, tomato sauce, water, crab boil, and chicken bullion. Bring to a boil, reduce heat to a simmer, cook for 45 minutes. Add the okra and bring back to a boil, simmer for 30 minutes. Add seafood bring back to a boil and simmer for 10 minutes. Taste and adjust seasonings. Total Carbs 148 12 servings=12.33 carbs per servings Ladle into bowls and serve with tall glass of ice tea. |

Also there's fried okra.
Place the okra in a colander to thaw, once it's thawed run it under hot water to get the slime out of it. Then drain it well and toss it with a little Atkins bake mix and drop it by handfuls into 350° oil and fry it until it's brown and crisp. Drain it on paper towels, salt it and eat. |
