No-cook Chocolate Cheesecake from Womans World

I made the recipe for No-cook Chocolate Cheesecake From Womans World Magazine last night and had a piece this morning. Was pretty good but now I know, I like baked cheesecake better.

I was going to make LindaSues but wanted chocolate and wasn't sure how to incorporate it in. Also only had two packs of cream cheese.

Here's the recipe. I changed a couple things and the carb count they give is really low without specifying the sweetner they used. My changes are following the recipe...

No-Cook Chocolate Cheesecake

1 cup water, boiling
1 tsp unlavored gelatin(may need more or less for desired consistency)
1 tsp vanilla extract
16 oz cream cheese(room temp.)
2 oz unsweetened baking chocolate squares
sugar substitue equal to 2 cups

Pour water in microwaveable 2 qt. bowl; dissolve vanilla and gelatin in water. Add chocolate to bowl; microwave until melted, in 15-second increments, stirring after each.

When chocolate is melted, stir in sugar substitute. Cut cream cheese into small pieces, sti in chocolate mixture. Blend with electric mixer until smooth, pour into buttered pie pan; refrigerate ntil cheesecake gels, several hours

Makes 8 servings. Per serving: 227 cals; 4g. total carbs.

I didn't have baking chocolate so I substituted 2 tblsp cocoa and 1 tblsp butter for each oz.
I also didn't want to use 2 cups granulated Splenda so I used 1 cup splenda and 1 cup vanilla sf DV's.
1 tsp geletin also didn't seem like enough so I used the whole package, glad I did.

I didn't figure out the carb count yet but using the granulated splenda it's WELL over 4 carbs per piece.

Wonder what would happen if we left out the chocolate and the sweetener and used sugar free jello instead of unflavored gelatin?

Your tweaks make sense. Sorry you didn't like it as much as you had hoped to. I'm assuming it was more mousse-like than the baked variety?

Using unsweetened Baker's chocoalte and 2 cups Splenda Granular instead of 1 cup DaVinci's:

Per Serving (excluding unknown items): 298 Calories; 27g Fat (77.1% calories from fat); 8g Protein; 10g Carbohydrate; 1g Dietary Fiber; 70mg Cholesterol; 206mg Sodium. Exchanges: 0 Grain(Starch); 1 Lean Meat; 5 Fat.

I'd like to know how they came up with 4 grams of carbs per serving!!? The only thing I can figure is that they used something like DaVinci's - maybe maltitol or some other sugar alcohol!

I'm wondering about the sweetner too. It was definately something with either 0 carbs or a sugar alcohol.

Yes, it was more like a pudding or mousse rather than that dense, compact cheesecake I love.
