Linda sue can you reccomend a great low carb dessert?

I am going to my in-laws over the weekend and I am comitted to staying on plan. she knows I am am on it and wants to help me. Can you reccomend a dessert I could make a day ahead and take, other than cheesecake( she'll have her own homemade cheesecake and they're marvelous)!

Is the cheesecake she's making low carb, alexandra1? It seems like a lot of my favorite low carb desserts are in the cheesecake category, but some other possibilities are Coconut Crunch Delight, Dottie's Pumpkin Pound Cake, Lorraine's Tiramisu or Panna Cotta.

The coconut crunch delight is great. I just made the pound cake recipe in those pans that make little square cakes instead of muffins, and tonight I am going to serve them to my company. Just split them open, spoon on berries and whipped cream. They are so cute.

This is very good, the only thing I'd did differently is halved the creamcheese part ( I thought it was too much and over powered the jello part). I also added slivered almonds to the top, and made mine in a 8x8 pan so it was deeper. It is a real pretty desert, My fav is with Strawberry jello.

Jell-o Salad

(I made 1/2 of this part)
In a glass cup sprinkle
1 envelope Knox Gelatine over 1 C cold water.
Let stand 2 minutes and microwave on high until hot. Stir until completely dissolved.
With an electric mixer, soften
16 oz. cream cheese
3/4 cup Splenda
softened Knox gelatine and mix thoroughly
A shot of SF French Vanilla Torani Syrup
1/3 cup mayonnaise
2 Tbs. SF vanilla instant pudding mix (dry)
Pour into bottom of 9X13 glass pan

When nearly set, Pour on cooled-until-syrupy
1 lg. pkg Orange Jell-O made with 3 3/4 cups water

Let set until firm, top with 1 cup whipped cream to which is added a dash of SF French Vanilla syrup and 1 Tbs. vanilla instant pudding mix. (dry) top with almonds

I haven't had great luck with Cheesecakes. I like the sound of some of the other options.

I am a Tiramisu slave. Had it in Italy as a kid and loved it, It couldn't be found here then about 8 years ago it exploded here! I think I gained 15 prgnanacy lbs. eating tiramisu....

Try Tim Birch's Almond Cloud Cake - it is very close to an Angel Food. I'm pretty sure you could make it a day ahead! Awesome served with berries & whipped cream. Although, a pound cake baked in mini pans (I have mini- bundt cake pans) would be awesome with the berries and whipped cream idea too!

I found it in the Recipe Room under Cakes. It is listed as Almond Cloud Cake so it is near the top of the list.
