Would this work??
I've been craving vinegery things lately, that sour taste. Trying to lay off pork rinds, as i tend to over do them, & trying to eat more vegis, as i've been relying more and more on cheese and nitrate type meats, and breads and tortillas.
So, what im wondering is, i've heard brussle sprouts are really good deepfryed, im going to try that tonite, but i wonder if i soaked them in vinegar for awhile, if they would have a vinegery taste?? Does it sound totally gross? |

Vinegar is good on cooked spinach, but it's high in carbs. (The vinegar, not the spinach.)
I don't have any idea how the vinegar would stand up to being deep-fried on a brussels sprout. Let us know! |

I didnt even THINK about checking the carb count, i just assumed it was lc. Duh! Well, im not making the brussel sprouts now, ive consumed too many stinking carbs today, thanks to the dang vinegar. I think i used about 1/2 a cup in my coleslaw! I'll try them tomarrow i guess. sheesh!

Sam, I thought vinegar was so low in carbs I didn't have to count it, either, so I went looking. According to the Atkins website, red wine vinegar does have 0 carbs per tablespoon, but cider & sherry vinegars both have .9 carbs per tablespoon, balsamic vinegar has 2.3, seasoned rice vinegar (which has sugar added) has 3 and white wine vinegar has 1.5, all for a 1 tbsp serving. It didn't list anything for malt vinegar.
On the other hand, if you are marinating the veggies and the draining the vinegar off, I'm thinking that you would have only a miniscule amount of the vinegar left in/on the veggies. As for your question about the brussels sprouts, what about deep frying them first and then adding a drizzle of vinegar afterwards. It sounds good to me, and I'd try it, but I don't have a deep fryer! Good luck, Deb |

Love vinegar and butter on Brussel Sprouts!
![]() They could be marinated in vinegar before deepfrying, ( dry then WELL before dunking in batter if using it) or make a Vinegar-sour cream-spicy dip...endless posibilities on the Dip ingredients...yogurt, mayo, or cream cheese, and whatever spices ya like. Sorry about the bad news.
I spent days one time trying to find the carb counts of various vinegars. I finally have it posted this way on my "Ramblings" page: 15- Vinegar- This one surprised me. I would have never guessed that vinegar has twice the carbs of cream! (Well, I knew about the balsamic vinegar, but never thought about white vinegar, cider vinegar or wine vinegar having so many carbs.) Count .8g per tablespoon (12.8g per cup) of white vinegar, .9g per tablespoon (14.4g per cup) of cider or wine vinegar, and 2g per tablespoon (32 per cup) of balsamic vinegar. |

I would have never thought white vinegar had carbs. Mind you a little goes a long way. Plus you usually pour off the marinade before cooking so a lot of the carbs are not involved in the final count.

Pami, I don't know where you're getting your numbers from, but here's the specs from the USDA National Nutrient Database:
Vinegar, distilled, 1 Cup (238g) Water: 225.58 g Energy : 43 kcal Energy: 181 kj Protein: 0 g Total lipid (fat): 0 g Ash: 0 g Carbohydrate, by difference: 0.1 g Fiber, total dietary: 0 g Sugars, total: 0.1 g I know Atkins carb counter places cider vinegar at .9 carbs per tablespoon, but from what I know about vinegar, this number cannot be correct. Vinegar is comprised of acetic acid and water. Acetic acid is NOT a carb. It does contribute calorically, but in an entirely different way than carbs do. There is no ketogenic impact/glycemic response. In fact, vinegar is shown to suppress the glycemic response when consumed with other foods that contain carbs. In order to understand Atkin's nutritional's error, it helps to look at the way the body processes alcohol. Alcohol breaks down into acetic acid (vinegar) in the body. If Atkins lists pure alcohol as having zero carbs, how can they list vinegar, a byproduct of the alcohol breakdown process, as having carbs? It's physically impossible. Alcohol, just like vinegar, contains calories, but no carbs. This isn't the first time that Atkins nutritional's has been wrong. Case in point- maltitol being portrayed as being a non glycemic food. I follow Atkins myself, but there are a few areas where they drop the ball. This is one of them. I know that there are a few people on this board that count carbs AND calories. Those people will definitely want to monitor their vinegar intake as vinegar is not a calorie free food. For the rest of us, though, vinegar is fine. |

Scott, OMG, it's been 6 months since I posted that.
I'm not sure now where that information came from originally, but I do know that when I was researching it, Cheri was helping me and sent me to a few sites that had counts for vinegar(s). The only one I remember for sure was calorieking.com. There were several others (five or six, maybe); they might be linked on Cheri's Newbie site. |

Wow! I use cider vinegar for my salad dressings. I use nutritiondata.com for carb counts, etc. Here's what they say on cider vinegar:
