Zuccini and Yellow Squash...

Is there a good way to measure or weigh this stuff? My mother has it coming in from the garden and I want to take advantage of it, however I don't know of an accurate way of telling how much I'm eating....

A wonderful way of eating it is...peel and slice thin, brush with olive oil, sprinkle with whatever spices you like (I like Emeril's or Mrs. Dash) and broil...Yum.

Zuchini is very low in carbs and calories. I don't even try to limit my intake.

1 cup raw sliced zuchini has 3.79 g carbs and 1.2 g fiber for a total of 2.5 carbs a cup. That means you could have 10 cups and stay within 25 carbs.

When I'm baking my chicken I 'oil and season' half a cup each of
zucchini and summer squash, wrap it in foil, and let it bake.

Squash and Cheese Casserole

4-6 squash, mix yellow and green for color, sliced
1/2 onion, diced
about a cup of grated cheddar cheese
salt and pepper
butter

Boil squash and onion til soft. Drain well. Mash a bit with your potato masher. Season with salt and pepper. Layer this mix in a casserole with grated cheese. Dot with butter and bake about 1/2 hour til bubbly and cheese is melted.

This one of my favorite LC recipes.
