Peanut Butter Pie
I made this to take to a family get together last night and the whole pie disappeared quick.
PEANUT BUTTER PIE 1st layer: 1 cup ground almonds 1/2 stick of butter, melted 2nd layer 2 Hershey’s 1 carb bars (plain chocolate) additonal 1/2 bar optional 1 tablespoon of butter 2 tablespoons of heavy cream 3rd layer: 4 oz. cream cheese 5 tablespoons of carb options skippy peanut butter 1/3 cup granulated splenda - I used 1/4 tsp of liquid splenda (you could probably use davinci's as well. 4th layer: 1 cup whipping cream 1 tablespoon cocoa powder, sifted 1 teaspoon of vanilla davinci's syrup - can add a little extra if you want the whipped cream sweeter. DIRECTIONS: In a pie plate mix together ground nuts & butter then press into bottom of pie plate. Put in the freezer for 10 minutes. Break chocolate bars into small pieces and place in a microwave safe bowl with 1 TBSP of butter. Microwave for 20 seconds then stir. Microwave for 20 more seconds and stir again, continue until chocolate is melted. When chocolate is melted stir in the heavy cream and mix well. Pour over the frozen crust & spread evenly. Return to freezer while you prepare the 3rd layer. In a medium bowl combine cream cheese, peanut butter & splenda. Mix well with an electric mixer until blended then spread over the frozen chocolate layer. Pour whipping cream, splenda, & vanilla into a cold metal bowl and beat with electric mixer until stiff peaks form. Add sifted cocoa and mix until fully incorporated. Spread over layer three and refrigerate until ready to serve. Can add 2 rectangles of another 1 carb Hershey bar, grated and/or ½ oz of chopped peanuts over the top if desired. Here's what ****** has to say about the recipe (using liquid splenda and including the extra chocolate and 1/2 oz of chopped peanuts on top): 8 servings- each slice has Calories:362.88 fat: 35.88 carbs 10.25 fiber 6.5 protein 5.5 so if you do the net carb thing it is 3.75 net carbs. It is a very easy recipe and goes together pretty quick even though there are several steps. enjoy!

this sounds delicious, thank you!! I will have to try and let you know what happens. I may even add some caramel Devinci's to it.

I will try this! I have a son who loves peanut Butter Pie. I will try this with him and see if he thinks it is low carb, which he thinks never tastes good! |

I'd be cautious about giving sugar alcohols to children or anyone of any age, Patt3. If your son is an adult, you might at least give him a warning about the possible effects.

omitting sugar alcohols
good point Linda Sue. My husband & kids can eat the hershey bars with no problem but everyone reacts differently. You could use the following for step 2 instead ....
1 oz unsweetened chocolate 2 tbsp butter 2 tbsp cream 1/2 tsp vanilla extract 8 packets of equal or 5 tablespoons of granulated splenda Just melt chocolate & butter in microwave then stir in everything else and pour over frozen crust.
