Lori's snickerdoodles
Last night, dh and I HAD to have something sweet so I made Lori's snickerdoodles for the first time. The recipe is on LindaSue's site. Here's the direct link: http://users3.ev1.net/~fontlady/snickerdoodles.html
Oh my, these are SO good!!!! They came out crispy and delicious; taste like almond-shortbread cookies. I didn't roll them into balls, I kind of just made small mounds on a cookie sheet. I also didn't roll them in the splenda/cinnamon, just sprinkled it over the cookies. (I also couldn't wait an hour for the dough to harden in the fridge so I stuck it in the freezer for like, 10 minutes!) But for all my modifications, they were still REALLY good. Too good. I'm having a hard time staying away from them. Try them if you've got a sweet tooth! Mare 160/134/120 5'2" |

aussie_chick, I've made them with both kinds of Splenda and there's very little noticeable difference.

I used granular.
I made a 2nd batch last night. (and not surprisingly, I'm out of ketosis) I didn't bake them as long so they are not as crispy as the first batch and are more delicate to handle. They're still delicious but if you like crispy cookies be sure to bake them long enough. I baked them the full 12 mins and then watched them very closely for another minute or so to make sure they didn't get too browned. The tops did not get browned but the sides did. I don't know if I prefer them crispy or softer. I may need to make a third batch to decide. Now, I am SWEARING THESE THINGS OFF until I get to goal! Mare |

Wathc out, they're addictive! I was making these once or twice per week in the winter months and eating a pan full as soon as they came out of the oven.
I'm staying away from these for awhile! Best low carb cookie recipe I've found! |
