How do i make canned green beans tasty?

Ok, i'm usually a fresh veggie gal, but I found this can of green beans lurking in my cupboard, and i decided to eat them at lunch. Any tips on how to jazz them up and make them tasty??

These are all good ideas; I like to use Basil, olive oil and a little vinegar to make a nice dressing....grated pecorino Romano doesn't hurt either!!
I've also made a salad by adding chopped hard boiled egg to the green beans...and serving the whole thing over lettuce.

You should add cut up bacon to the green beans....and some bacon grease if you want too.....makes green beans sooooo good!

Fry some bacon, dump the beans in when it's really hot. Heat until beans are hot and starting to brown. Melt some cheese over top. My family of six eats 2 qts. (home canned) of these.

You could do what I did as a kid . . . smother them in ketchup.

That wouldn't be very LC though, would it?

Seriously though, they're really good cooked in a little bacon grease or butter and topped with crumbled bacon and/or slivered almonds

boil them in any broth... If you can find sugar-free boullion (or care to deal with the miniscule amount per cube, which I do), it works great.

Also, drain the water and do a quick saute in oil, soy sauce, and garlic. (You find beans like this often at Chinese buffets around here.) (AFAIK, soy sauce is better for you than most labels say, and the sugar in the ingredients can be mostly ignored, because it is a fermented seasoning and most of the sugar is digested during fermentation.)

Drain them and add:

Just enough mayo to coat, crumbled bacon, a few onions and celery just softened in butter in the microwave and shredded cheese to taste.

Dump mixture into a pam'd casserole and bake in the oven at 350 degrees for about 30 minutes. Um delish, just like green bean casserole, but faster.

Just drain them and add about 1/4 cup of Ragu Mozzarella and Parmesan sauce and heat. You can also add a tablespoon or 2 of shredded cheddar if you like. Very simple and very good.

Here are two recipes to try

Easiest Green Bean Casserole
In microwave bowl )pyrex dish) place 1 can French style green beans, 1/2 teaspoon of onion flakes, 1 ounce cream cheese, and 1/2 teaspoon dried,granulated roasted red pepper and garlic seasoning ( or just plain garlic powder if you don't have this). (YOu don't have to stir this up yet!) Microwave for 1-2 minutes or until cream cheese is melted. Stir until cream cheese is blended well with the beans. sprinkle shredded cheddar cheese on top and nuke again until cheese is melted.

Green Bean Sour Cream Casserole
>
> 2 cans French style Green beans, Drained well
> 8 oz grated Mozzarella Cheese
> 2T butter
> 1/2 minced onion
> 1 tsp salt
> 1/4 t pepper
> 1 cup sour cream
>Put drained beans in a 2 qt casserole and sprinkle cheese over the top.On top of the stove make a sauce with the 2T butter,1 cup sour cream, salt, pepper, and onion. Cook slowly for 2 minutes. Pour sauce over green beans and cheese.Bake at 400 for 20 minutes uncovered.

One of the few ways that I like using canned green beans is in Dottie's green bean casserole. Here's my adaptation of her recipe:

DOTTIE'S GREEN BEAN CASSEROLE
2 cans French cut green beans, drained well
4 ounce can mushrooms, drained well
1 small onion, sliced into very thin rings (2 1/2 ounces)
2 stalks celery, finely chopped
2 tablespoons butter
1/4 cup mayonnaise
1/4 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon garlic powder
8 ounces shredded cheddar

Sauté the onion, celery and mushrooms in the butter until very soft and a little browned, about 8 minutes. Combine all ingredients in a greased 1 1/2 quart casserole or 8x8" baking pan. Bake at 350º, uncovered, 30 minutes or until nicely browned and bubbly. Or, microwave on 50% power, loosely covered, about 30 minutes, turning down to LOW if it starts to get too brown.

Makes 6-8 servings (6 servings - 4.5 net carbs each) (8 servings - 3 net carbs each)

I'm going to have to try it. Also, have you tried substituting green bean recipes with broccoli? I'm wondering if that would work too.

mooette, I have tried it with broccoli. Here's the recipe:

BROCCOLI MUSHROOM CASSEROLE
2 16-ounce bags frozen broccoli cuts, cooked and well drained
4 ounce can mushrooms, well drained
1/2 medium onion, chopped (2 ounces)
2 stalks celery, minced
2 tablespoons butter
1/4 cup mayonnaise
8 ounces cheddar, shredded
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon garlic powder

Sauté the onion, celery and mushrooms in butter until soft using the same pot that the broccoli was cooked in. Mix all ingredients in a greased 2-quart casserole. Bake at 350º 30 minutes.

Makes 8-12 servings (8 servings - 4 net carbs each) (10 servings - 3 net carbs each) (12 servings - 2.5 net carbs each)

If you're in a hurry just throw a chicken bouil. cube in the pan with a can of green beans and let boil for a few minutes.

I use this recipe with fresh green beans. I'm not sure how it would taste with canned.

Asian Green Beans

1 tablespoon Bertolli® Classico Olive Oil
2 clove(s) garlic, finely chopped (or liquid garlic works too)
1 pound green beans, trimmed
1/4 cup Carb Optionsâ„¢ Asian Teriyaki Marinade
1/2 cup sliced almonds

In 12-inch skillet, heat olive oil over medium-high heat and cook garlic 30 seconds. Add green beans and Carb Options Asian Teriyaki Marinade and cook until beans are tender, 7 minutes. To serve, toss with almonds.

Serves: 6
Preparation Time: 6 Minute(s)
Cook Time: 8 Minute(s)

Nutrition Information Per Serving:
Calories 130, Total Fat 9g, Saturated Fat 1g, Cholesterol 0mg, Sodium 340mg, Total Carbohydrate 10g, Dietary Fiber 4g, Sugars 0g, Protein 4g

the NON veggie eater wonders why.........if green beans are so good why do U all have to cover up with so many extra flavors???? I never understood drowning ANY food with something else......that has to mean u dont like the flavor in the first place.........example gravy on mashed potatoes??? why they are good all by themselves......opps BAD example
ok lets say gravy over turkey? dressing on salad? yes that looks better lol

This is probably going to sound a bit strange to most of you, but
I like canned green beans made like potato salad.

I use everything that goes into potato salad, and well-drained
canned green beans in place of potato cubes.

I don't measure it at all, but what i use is:

mayonnaise
yellow mustard
chopped onion
sliced or chopped celery
chopped hard cooked eggs
well-drained dill relish
just a touch of Splenda

Just mix it up in a bowl and chill.
It tastes better after sitting in the fridge overnight.

My mom used to make this when we were kids, way before I ever even
heard of lowcarbing!

MMM Pami, that sounds wonderful! I'm going to try that the next time I have some green beans.

I like my canned green beans with cajun seasoning, but I really prefer them fresh, sauteed with celery, onion, and herbs in olive oil.
