Easy Strawberry Pie
Gosh, this is good..and we love it..Although it does have the
dreaded Equal in it...but it's great. 9 inch pie pan Fill pie pan 1/2 to 3/4 full of chunked fresh strawberries In a saucepan: Mix one Cook N Serve Sugar Free vanilla pudding mix...a small one One small Sugar Free strawberry jello 1 1/4 cups of water Mix all well..with a whisk and bring to boil...Then pour over the strawberries in the pie pan..Refrigerate until set..Slice like you would a pie..and serve with topping.. |

I think it all depends on how many strawberries you use..The
pudding mix has about 4 for 1/4 box..and you don't use milk..so it would be very little for the whole recipe..just depending on how many strawberries you would use.. ![]() |

I arbitrarily chose 4 cups strawberries and plugged the ingredients into MasterCook.
This is what it gave me: Per Serving (based on 8 servings): 36 Calories; trace Fat (6.1% calories from fat); 1g Protein; 8g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 82mg Sodium. |

I just thought of something else. This would be GREAT with a graham cracker crust
to take to summer potlucks and picnics and stuff. And, as luck would have it, I just happen to have a graham cracker crust recipe. * Exported from MasterCook * "Graham Cracker" Pie Crust Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Dessert Holiday Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup flax meal 3/4 cup almond meal 1/4 teaspoon salt 6 Tablespoons butter 1/3 cup Splenda bulk Mix flax meal, almond flour and salt in a medium bowl. In small bowl, melt butter with Splenda in microwave; stir to combine. Pour over dry ingredients and mix till well blended. Press mixture into an 8- or 9-inch pie pan. Bake at 375F for 7 minutes. Cool. If recipe calls for unbaked pie shell, just chill for about an hour. - - - - - - - - - - - - - - - - - - - Per Serving (based on 8 servings): 177 Calories; 14g Fat (73.4% calories from fat); 5g Protein; 7g Carbohydrate; 4g Dietary Fiber; 23mg Cholesterol; 155mg Sodium. This looks GOOD! I think I will try it tomorrow after I make a stop at the grocery store. I don't usually use the packaged pudding mix, but this recipe stretches it out pretty far and I need something new. Strawberries are wonderful right now.

I love that "crust"...but this is sooooooooooooooo easy to
do without the crust..LOL... Now..What other flavors would be good?? Do they make a sugar free peach jello??? so you could have peaches in it?? Or... raspberries would be wonderful.. Or: Make a small amount and put it on top of cheesecake or custard pie.. How was the white chocolate pudding??? |

This recipe turned out to be quite delightful. Very nice, but as always on the first time around, I ate too much!
I passed the recipe out to at least 6 low carbers at work today. They were very excited.I will be curious about the white chocolate, because I think that only comes in instant Jello. The only boil kind of SF pudding is vanilla and chocolate....that's how it is around here anyway. The peach idea is fabulous and they just started making peach SF Jello a couple months ago. I bet that would be delicious! Raspberry would be nice too...you could also do mixed berries with the raspberry Jello. Thanks again for posting. This was really good.

I havent actually eaten a slice yet, but I did taste it and its YUMMY!
I cooked the jellos just like the recipe calls for but didnt let it come to a full boil because it was already thick. This is an awesome treat! Thanks robyn |

Hey...how about strawberry and rhubarb pie with this filling??
I think you could cook the rhubarb in some water...to soften it...then add the pudding/jello mix..and pour it over the strawberries...What do you think? |

I just put mine in the refrig. I have one question - How will this slice? Will it make nice slices or globs?? Not that tasty globs are bad...but this is for company!!

It slices just like pie...It is like a thicker jello consistency..Of course
it depends on the amount of strawberries in your pie..and if you don't have enough jello mixture to hold them together..or if you put too many strawberries in you might be a little more globby..I think you will be pleasantly surprised... ![]() You could add some toasted almonds to put on top of the whipped topping..or just a half of a strawberry for color.. OH! this is so good. So fresh tasting. I just had a slice for breakfast. It slices beautifully. I dont think this pie will last very long!

Instead of the pie plate...I bet these would also be nice as a parfait...
Spoon a strawberry jello layer into a goblet and alternate with layers of SF whipped cream.... Or be lazy like me and just put whipped cream on top. ![]() |

This was sooo good! I made it in a quiche dish and it made 8 servings. It was perfect for every kind of diet that my guests were on too!!!

Made this for my husbands B-day and oh boy is it ever good. I think the next time I'll try blueberries, lemon jello, and lemon pudding. The strawberry/rhubarb sounds really good too! Great recipe, thanks so much for sharing it with us.

This was fantastic! I only had instant pudding mix, white chocolate, so I did the jello on the stove, added the pudding mix, and added one cup of LC milk. OMG it is so fresh tasting and so heavenly. Thanks caroline, It was great. Julie
