This is very similar to a recipe made by Joanna Lund in her Healthy Exchanges cook books.

I bought the strawberries on sale, and they were the best ever. Large , sweet and bright red. I made the original recipe, and cut the large strawberries into halves. They filled the pie dish just right. Red tops up! The pie chilled in the fridge all day. We topped it with whipped cream, and it was perfect, and very pretty also. It looked like the strawberry pie from Big Boy Restaurants. AND so easy to make! Thanks for this recipe.

oh my gosh!!!!!!!! this pie is so great!!!!!!!!!!!!!!!!! it was a hit- i told them it was low carb and used sugar free pudding and jello in it with the fruit. they loved it. sue

Carb count depends on how many strawberries you use.

Pami did this earlier in the thread:

just made this-- I had no LC milk, so used heavy whipping cream. It's very pink-- I used a mix of Strawberry Jello and Lemon Instant pudding. We'll see how it comes out. I'm making this for my roommate's 14 year old daughter.

i ate two of these in two weeks not too long ago... even used it as a "crust" for a no bake cheesecake lol... its too good for words... so i'm staying away for a while.
