Carolyn, I just have to let you know how much I LOVE this recipe. It is so good that several non-dieting friends now make it, and have said how excited they are that strawberries are back so they can make Carolyn's Strawberry Pie.

Made the Strawberry one over the weekend, super good, not sickly sweet, a big 10
Also tried something a big different and to me was soooo beyond yummy
got a Chocolate cook/serve s.f. and a cherry jello s.f. w/the 1 1/4 c. of water and poured it over s.f. cherries. I think there is a dessert called Black Forest (chocolate & cherries) all I can say is it was SLAMMIN' GOOD

I have it in the refrig now. I could not find the cook in serve that was sugar free so I had to use the instant. I hope it does not mess up my pie!

I'm one of those people that doesn't really measure. Normally, I just put some almond flour and a couple of tablespoons of butter and a couple of tablespoons of splenda and mix it up and pat it into a glass pie pan and then bake about 8-10 minutes at 350. I generally grind the almonds myself for this cause I like the crunchiness and they don't come out as fine as using almond flour. To guess, I use about 1/2-3/4 cup of almond flour/meal generally. Sorry I don't have exact measurements here.

I read some almond crust recipes on here before where people added in an egg white to hold it together better, but I have not tried adding one yet. I don't mind the way it comes out as it is. HTH

It was really good tasty but it did not gel like a pie. (Kids and DH loved it) It was more like mush with strawberries. I used 1.5cup water and 1cup lactaid milk fat free. I boiled this then added in the strawberry jello and vanilla pudding mix. I did get specks of vanilla pudding that did not dissolve. Maybe thats what I did wrong.

?? When you use the instant do you put it in the boiling water?

I made the same mistake the first time I made it. The cooked pudding mix needs to dissolve in cold liquid before you cook it. The first time I got little lumps of undissolved pudding mix, because I tried to dissolve it in hot liquid. The second time I cooked both mixes in 1 c water. When thickened I added 1 cup lc milk. It turned out just fine.By the way Carolyn, we liked the strawberry pie, but we LOVED the raspberry! Maybe it was the quality of the strawberries wasn't as good as late in the season.

Jodi: The original recipe called for 1 1/4 cups of water..total..so it would be nice and thick..like a gel with strawberries in it. You added too much liquid, I think that was your problem, I think..My pie you could slice and it stands alone..

Thanks, I will try again. It tasted so good! Dd9 ate most of it. What a great dessert for the kids.

Is this right???
Mix the instant in 1 1/4cup first then cook it and dissolve the jello.
(I am having trouble finding cook and serve but will keep looking)

Yes, you need to totally have the pudding mixed up without lumps in the cold water..I think I mixed both in the cold water..and as the water heats up the jello will dissolve nicely..

I made this with 1 cup CC milk, and 1 1/4 cups water. I mixed the pudding mix and jello and all liquids together in a pot and boiled it all, then poured over 12 oz of strawberries. It turned out really good!!

I had it with Kevin's yellow cake recipe and a little whipped cream and it was like a strawberry shortcake!!!

I made this recipe for dessert for Sunday night. I used SF Banana pudding, strawberry jello and bananas. I also used 1/2 cup heavy cream and the rest water.

Everyone LOVED this dessert. My daughter's boyfriend said he couldn't believe how creative I was to come up with these things..... I DID tell him that I wasn't the creative one, but I am sure glad there are so many creative people here! Next I want to try some of the other ideas!

I just put this together and it is cooling in the fridge. I used chocolate cook n serve pudding and strawberry jello, over strawberries. I used almost 2 cups water, cooked it in the microwave. Can't wait 'til latter today to try it.

Yummm Nigel! I would like to hear how this turns out for you. Will you use fruit? I was thinking about making it without fruit, just doubling the recipe to make it a thicker (taller) pie.
