I tweaked this (ran out of strawberry jello) to make "Strawberry Lemonade Pie" by using sugar free jello and sugar free lemon pudding (only had instant, so just added it to the hot jello water to dissolve). It was so good- very refreshing and slightly different! I think you could use raspberries or blueberries too. This is my new breakfast- turkey bacon and strawberry pie!

This sounds yummy. I have 2 containers of strawberries right now. I may have to give it a shot tomorrow. Thanks for bumping it back.

Well, gotta say . . . WTG Carolyn! This is very good. I don't have protion control problems with very many lo carb foods but this will definately need too be saved for when we have company to help eat it.

I copied and pasted the original, but I haven't tried this, so I think that you don't use the milk. It sounds that way to me. If not, I hope someone lets you know. I don't know about the cooling, but I think I might let it cool a bit before pouring it over the strawberries.

9 inch pie pan

Fill pie pan 1/2 to 3/4 full of chunked fresh strawberries

In a saucepan: Mix one Cook N Serve Sugar Free vanilla pudding
mix...a small one
One small Sugar Free strawberry jello
1 1/4 cups of water

Mix all well..with a whisk and bring to boil...Then pour over the
strawberries in the pie pan..Refrigerate until set..Slice like you
would a pie..and serve with topping..

SugarBabi,

I just bring the mixture to a boil (thickened) and then pour it over the strawberries. Works just fine!

on the top..Yummy.

Thanks Nikki. I am definitely going to make this sometimes later this week. I really love just about anything with strawberries in it.

I prepared this yesterday. My husband who does not care for jello or pudding, LOVED it! He didn't ask me what all was in it, so I didn't tell him. If I did, he probably wouldn't eat it again.

Well they only had the instant kind today when I went to the grocery store, so I got it. I also got the chocolate cook 'n serve kind, so I'm not sure, but I may make both. I'll let you know how the instant vanilla works as I'll be trying that one first.

when you use instant do you still bring it to boil with the gelatin?

That's a great idea. Let us know how you like it, okay.

Griffin, I'm going to dissolve the jello in the boiling water and then add the instant pudding. I'm making it tonight.

Yes, I made it without the crust Thursday and took it to work on Friday. I used 4 cups of quartered strawberrys and it held together very well. I liked the flavor better after it sat in the fridge overnight, it seemed to mello. This dessert was a hit with my non-LC lunch buddies, btw!
