I tweaked this (ran out of strawberry jello) to make "Strawberry Lemonade Pie" by using sugar free jello and sugar free lemon pudding (only had instant, so just added it to the hot jello water to dissolve). It was so good- very refreshing and slightly different! I think you could use raspberries or blueberries too. This is my new breakfast- turkey bacon and strawberry pie!

Well, gotta say . . . WTG Carolyn! This is very good. I don't have protion control problems with very many lo carb foods but this will definately need too be saved for when we have company to help eat it.

I copied and pasted the original, but I haven't tried this, so I think that you don't use the milk. It sounds that way to me. If not, I hope someone lets you know. I don't know about the cooling, but I think I might let it cool a bit before pouring it over the strawberries.
9 inch pie pan Fill pie pan 1/2 to 3/4 full of chunked fresh strawberries In a saucepan: Mix one Cook N Serve Sugar Free vanilla pudding mix...a small one One small Sugar Free strawberry jello 1 1/4 cups of water Mix all well..with a whisk and bring to boil...Then pour over the strawberries in the pie pan..Refrigerate until set..Slice like you would a pie..and serve with topping.. I prepared this yesterday. My husband who does not care for jello or pudding, LOVED it! He didn't ask me what all was in it, so I didn't tell him. If I did, he probably wouldn't eat it again.

I made this last night and am having it for breakfast this morning. I sub half the water for cream and used bananna pudding and strawberry bananna jello with strawberry whip cream. Delish....

Yes, I made it without the crust Thursday and took it to work on Friday. I used 4 cups of quartered strawberrys and it held together very well. I liked the flavor better after it sat in the fridge overnight, it seemed to mello. This dessert was a hit with my non-LC lunch buddies, btw!
