Thanks Josie...I will look for cook and serve vanilla sugar free. I think this would be great for taking to a cookout! I am hoping that my fiance likes this so that I don't have to eat it all myself or do you think it would freeze?

If not, you could figure a way to make half the recipe. It would take a little measuring of the powders and finding a smaller pan, but there is no reason that that couldn't work just fine. I think this is quite forgiving. |

This pie turned about pretty well. However, when I set it in the fridge for cool, I set it in there lop sided...So one side is higher than the other...lol....tastes great though! Mine kinda came out in a blob though.

This looks amazing! Although it is wintry outside tonight as I write this, I am looking forward to making this at our BBQ's when the spring and summer weather finally arrive! YUM.

I make this all the time, summer or winter. I add 1 cup of Hoods milk also, and I think it makes it creamier. We love this stuff. Oh yea, I have tried all different kinds of berries. and mixtures, and they are all great.

Jaideyes. Next time try a cup of Hoods milk. It really gives it a creamy texture.

Does it have a very jello-ish texture? I love the flavors but the more I think about this pie, the more I wonder if it jiggles and wiggles like Jello? (Not a fan of that texture but a big-time lover of the other ingredients!) Thanks.

Add the 1 cup0 milk and it's more like a light pudding, Try it, you will not be dissapointed. I was never a jello eater either. Julie

Yes, you can substitute cream and water, and i used the water and just added 1 cup Hoods. everything else is the same, just add 1 cup hoods or cream and water to equal a cup. Julie

Does anyone know about how many carbs in a pound of strawberries? I like the easy way just add the whole thing instead of measuring! I need to know the carb count so I dont overindulge. TIA! |

Way too much time on my hands!
|
![]() I just did this- without the crust this time- and with frozen stawberries. (My first time trying it with frozen berries- however if this works out, I have some blackberries in the freezer that are just screaming to get into a pie like this!) I measured out 4 cups of strawberries and set them in a colander over a small saucepan. Then, when they had thawed somewhat, I cut the berries into halves, quarters, or chunks. (Some of them were huge!!!) I let them continue thawing and draining until they were almost completely thawed, with only a few ice crystals remaining. Then I measured the juice that had dripped into the saucepan, and added Carb Countdown 2% to make 1 1/4 cups liquid, and used that in my Jello and pudding mixture. The only problem now is- I have to wait until it cools and sets before I can try it!! ![]() |

Ok so next time I'll use less, I didnt think it was that much! But as far as the pie, it was excellent, we added whipped cream and sprinkled some crushed LC snickerdoodles on the bottom and on the top ant it tasted like straberry shortcake! |

I tried this and DH and I both liked it. I made it the way the recipe states then added 1 C. Hoods CC milk. It was plenty "stiff" enough and very good w/whipped cream on top. If I were taking it somewhere I'd probably use a crust.
