Hi,
I guess it would be creamier with the LC milk instead of the water, huh??? Well, I did the rhubarb..using 2 big sticks of the rhubarb..put it in the 1 1/4 cup of water..with a little splenda and boiled it until it was done..I chopped the rhubarb beforehand.. Let the mixture cool and then add your pudding/jello mix reheat..Then pour over your strawberries.. It was very good. When I did this...I didn't let the mixture cool down and it was hard to mix all the ingredients in smoothly.. |

OOPS, I didn't realize there was starch in the instant pudding. I know there are 6 carbs per serving. How many carbs in the cook and serve pudding?

I am having trouble finding the SF cook & serve pudding mixes. I finally found a Kroger brand. I guess the 'instant' is the most popular.
Scottsdalejulie....... The cook & serve is 5g. per serving. I might try the instant if this remains a problem in finding in stores. I am planning on making this pie tomorrow. Sounds great. |

I don't know if this helps, but the Sugar Free Jello cook and serve pudding is only made in chocolate and vanilla flavors. It is almost always there, but tucked back in a corner....you really have to look. It is still in a blue box. Every time I go to a store and I know they carry it, it still takes me awhile to actually locate it on the shelf.
I have always preferred the texture of cook and serve pudding over instant. ![]() |

Thanks guys. Carolyn, I used the 1 and1/2 cups of water and the one cup of milk, and it turned out just wonderful.. I've got some blueberries, so I'm gonna figure out what kind of jello goes with blueberries, and try to find the cook and serve vanilla pudding, if not I'll just use the instant, and hope all goes well. Julie

Raspberry jello goes well with blueberries..My minlaw makes
a Purple Lady jello dessert..she uses canned blueberries..and uses the juice and mixes it with the raspberry jello.. Let us know.. |

I have been having a slice of this everyday since saturday and it is amazing. I feel like I am cheating when I have it because it is just so good and fresh and fruity! I'll have to go pick some strawberries this week to make another one!

Carolyn, I made a blueberry, balckberry one with rasberry jello and white chocolate pudding, and again added the 1 cp LC milk, and it was fantastic, My Dh just raves and raves about this, and it is so easy. If you haven't tried it, you must.

If there isn't enough of the liquid mix....are you all putting more water or milk into the saucepan? Does that dilute the flavor at all?
I would hate to have to double the sauce by adding another box of the jello and the pudding. Thanks |

no, I used 1/1/2 cup of water and then 1 cp. of LC milk. If you look at the jello directions, it calles for 2 cups water and the pudding mixture calls for 2 cps. I think. Anyway, I used a large pyrex pie pan, and put all the fruit on the bottom and then the above over it, and it just filled the pan nicely, and turned out super.

I made a peach one..with just the water..but next time I will try it adding the LC milk..OR how about peach with orange jello...kinda a Fuzzy Navel pie??? The whole bag of frozen peaches had about 40 carbs for the fruit..not bad. Now...you must use fresh blackberries or frozen ones??? DH loves blackberries... Keep experimenting...everyone. |

You know, I was thinking this might be good as an added layer to a cooked and cooled cheesecake. I'm sure it would only take about half (or less) of a recipe. Just cover the cheesecake with sliced strawberries and then pour enough of the jello/pudding mixture to cover. It sets up so quickly and has such a fresh strawberry taste, I just think the two flavors would be great together. I love fresh strawberries with cheescake but they never seem to stay as fresh as long as the cheesecake. This would solve that problem, as the pie I made several days ago is still good and fresh tasting. Guess the jello preserves the berries.

Okay gang...my perfected Strawberry-Rhubarb..
Strawberry Rhubarb 2 big sticks of rhubarb, chopped 1 1/2 cups of water 2 Tbs. splenda Put this in a small saucepan and cook until rhubarb is very, very soft..Let it cool down..keep it in pan. Add: 1 small pkg. of SF strawberry jello 1/2 small pkg of Cook and Serve vanilla pudding Mix the pudding/jello into the cooled rhubarb mixture and stir very, very well..Then return to the stove and cook again until boiling for a minute.. Pour over pie pan filled with strawberries..cool.. Note: I only used 1/2 pkg of the pudding and it came out great. DH says this is the best one yet.. ![]() |

Definitely a keeper
Many years ago I used to make a strawberry pie but of course it was made with sugar. I tried it using splenda and sugar free jello but just didn't work out. Carolyn posted this the very next day so waited until there would be a group around to eat it. Yesterday, I took it to a family outing and it was gone at lunch and we went to the store to get the makings for a second one for dinner.
This is a fantastic recipe and so easy. Sandy |

This sounds so good! I am a little confused though. So I use one box of sugar free cook and serve vanilla pudding, one small box of sugar free strawberry jello, and water for the filling over the berries? Is the only liquid the water that is mixed w/ the pudding powder and jello powder in the saucepan? Thanks for much...
Also, does anyone have any ideas as to how many berries I should be using? I plan on making this dessert in a 9 inch glass pie plate. Thank you! |

Yes, you are correct. I did up the water to 1 1/2 cups just to make it go a bit further covering the berries. I also used 1 pound of strawberries sliced. In my opinion, it was just the perfect amount. I love this recipe and I love it best just using the simple strawberries and whipped cream.
