Question about one of Dana Carpender's recipes

I LOVED zucchini pancakes when my mom used to make them so when I saw the recipe in her cookbook I was really excited. They came out ok, my mom thought they were gross, it's definately because of the Atkin's bake mix. Do you think I could use almond flour instead? Would it work if I added baking powder?

I personally find anything with soy in it to be gross tasting. Try making this alternative bake mix instead. I'm sure you'll appreciate the huge difference, and improved taste. You need to do a bake mix rather than just the almond flour, because you need the leavening, and the almond flour on its own is too heavy and fatty.

1 cup Vital Wheat Gluten -- 24 gr
1 cup whey protein powder, unflavored -- 6 gr

2 tablespoons baking powder -- 7 gr
1/2 teaspoon baking soda
1/2 teaspoon salt -- to balance flavors

Net carbs is 12.66 per cup.

The carb count for almond meal is as per USDA.

Thank you so much for that recipe. I was going to make bake mix for the first time today, but I love almond flour so I will use that.

This is my Ricotta Cheese pancake that my DH and I love

1/3 to 1/2 cup ricotta cheese
1 large egg
2 Tbs. ground flaxseed
cinnamon
1/2 packet of Splenda

Mix it up real good and cook it in an 8 inch omlette pan (works well). It makes one big pancake. I put DaVinci's pancake syrup on it. Vanilla would work too. Or you could put some berries on it.
