Uh oh!! How high in carbs are they? I just made them tonight for dinner for the first time (boiled them, then mashed like potatoes with butter) - they were SOOOOOOOOO good!!!

Thanks for the carb count! I didn't realize they were so high. I could have eaten the whole pot of them they were so good. I guess I'll be cooking these only once per month.

UT OH....I just bought some today, and did a search here and found this thread after not seeing anything about them in DANDR. I thought for sure they were low carb...oh well.

The first time I had these was in the Fall. I made a stew with a package of stew veggies and a parsnip was in there. It tastes just like a carrot to me, so if was kind of a warning that it would be high in carbs. Tasted good, though!!

Mmmm, brings back memories - my mom used to cube up parsnips, rutabagas and a carrot, boil til tender, then mash with butter and sesame seeds! Soo soo good!
Not low carb but full of good nutrients - should be ok every now and then on Maintenance! Char |
