Linda's NB Jello Cheesecake & Spinach Lasagna

What in the world would we do without Linda's wonderful recipes?! I try to cook something new on the weekends, and these were the new recipes I tried this weekend. They both are fabulous!! I used Cherry SF Jello for the cheesecake, and I had to take a bite of it before putting it in the fridge to set - my heart melted! LOL Just had some lasagna - anyone who thinks eating LC is deprivation is just so wrong.

I make Linda's Spinach Lasagna all the time....but I make Spinach Mushroom Lasagna....I am a mushroom lover. It is excellent and the mushrooms add a great texture. At Costco I buy the big container of white button mushrooms. I slice up about half the mushrooms and microwave them in a bowl until some of the water is out of them. They are usually about half cooked from the microwave and I pour off a significant amount of mushroom juice. Then I layer it in the lasagna just as the recipe states. If you prepare the mushrooms first, the lasagna will get too watery. I also bake mine in the oven.

Great recipe...the best version of lasagna I have made.

Yeah... I put mine in the oven, too... my dish was much too big for a microwave, and I like for the cheese to get brown on top.

I also bake mine in the oven as you can see in the variation at the bottom of that page. I found the original recipe in a microwave cookbook, which is why I've given the MW instructions. I later realized that I preferred it baked, but if you're in a hurry or it's too hot to turn on the oven, the MW version is fine.

Josie, at what point in the layering do you add the mushrooms - after the spinach filling?

What am I doing here chatting when I have a million things to do today? I've got a bunch of food to cook that my husband and son probably won't even eat, but at least they can't say that I left them to starve, LOL. I still can't believe I'm leaving tomorrow.

Yeah, that sounds about right. I don't think I have ever paid much attention to where I stick them in. All I know is that I get two layers in there somewhere. I know I refer to adding the mushrooms in a lot, but I guess it is because I discovered it is a really nice addition and now I can't imagine the lasagna without them. It gives great texture and body to the dish. You really should give it a try. I slice up the mushrooms and then microwave them in a bowl until they are about half cooked. The juices settle in the bottom of the bowl and I usually pour out more than a half cup of water that would ordinarily end up in the lasagna. I let them cool a bit and layer with everything else.

This is one of my favorite meals. It's putsy and I am always tired after making it, but well worth the effort....and it makes a big old pan!
