Ruben Casserole

Made this last night for supper and it was a hit. Thought I would share it with everyone.

1 lb. jar of cauerkraut drained
1 can Libby's corn beef
2 cups grated Swiss cheese
1 small tomato sliced thin
1/4 cup mayo
2 Tablespoons thousand island dressing
3 Tablespoons melted butter
1 slice low carb bread

spray 9x13 pan with Pam. put half of the sauerkraut in pan. Crumble half of the corned beef over the sauerkraut. Sprinkle with half of the cheese. Put a few tomato slices on top. Do another layer of kraut and meat. Mix the mayo and thousand island dressing together (I thinned this out a bit with water) and pour or spoon over the casserole. Top with remaining cheese and tomato slices.

Put the bread into food processor and add melted butter. Kind of sprinkle this over the top and then bake at 350 for a half hour or until hot and bubbly.

Not too good with the computer, so sorry no picture. Not taking credit for this recipe - I got this from my sister-in-law years ago.

Wow! Thanks so much for posting this!!!

I had a recipe (pre low carb) that my husband LOVED--but, it had egg noodles as a base...........

This sounds SO YUMMY, and I'm sure he'll love it also.........

Do you know, can you use the deli style sliced corned beef--instead of the stuff in the can? I always used that before--I didn't like the canned stuff.

Ramona, I don't see why you couldn't use the deli style corn beef, but the Libbey's isn't as bad as other brands. The first brand I tried looked like dog food and I ended up throwing it out!
