best flax meal muffin?
I bought some flax seed yesterday and wanted to make some muffins. When I checked the recipe room there were too many to choose from! Which recipe is your tried and true favorite?

I haven't baked with flax seed yet, but I'm about to as well...
I've heard SpongeBob's recipe is good (I think it's actually for a loaf, but I bet you could make muffins too) Here's the link: FLAX MUFFIN/BREAD - all my research! :) Also, I've heard nothing but good things about Dobie's muffins (in the recipe room). Those are the first ones I am going to try... Hope this helps! ~K |

These are the only ones I've ever made, but they are good:
![]() KIM'S FLAXMEAL CINNAMON MUFFINS 3 eggs 1/4 cup plus 2 tablespoons oil 1/4 cup sugar free syrup, such as Da Vinci (I used brown sugar flavored) 2 tablespoons water 1 tablespoon vanilla 1 cup flaxmeal 1/2 teaspoon baking soda 1/2 teaspoon baking powder 2 tablespoons cinnamon (the amount is correct) In a medium bowl, beat the eggs with a fork. With a fork or spoon, beat in oil, syrup, water and vanilla. In small bowl, combine remaining dry ingredients, then stir into egg mixture. Let stand 5 minutes. Spoon into 12 well-greased muffin cups (without papers). Bake at 350º 12-15 minutes, or until they are lightly browned and seem set to the touch. Remove from tin at once to cooling rack. Store in refrigerator. Makes 12 muffins (1 net carb each) Can be frozen These taste remarkably like bran muffins, but with a lighter texture. Mine had pointy peaks on them, so they look a little funny, but they taste fine. They sliced nicely even when still hot from the oven. They freeze quite well. I thawed one and reheated it very briefly in the microwave and it was perhaps a bit spongier, but still good. |

jaob-The muffin recipe Linda gave you is great and it doesn't tak a lot of foo foo stuff!! The Dobie muffins in the recipe room are also very good. There are some good cereal recipes using flax, also pancakes...... I love my flax!!!

Posted by Dobie Serves: 9,10,10,10,10,10,10,5 CarbsPerServing: 20g carbs total Effort: Easy -------------------------------------------------------------------------------- Ingredients: 1/4 cup flax seed -- grind - should make 1/2 cup ground 1/4 cup protein powder 2 tablespoons oil 1/4 cup artificial sweetener -- splenda is best 1 egg -- beaten 1 teaspoon baking powder 1 1/2 teaspoons banana extract -- or flavor of choice 1/4 teaspoon salt substitute -- gives potassium 1 ounce chopped nuts -- optional 1/2 cup water How to Prepare: Mix the above, let sit for a few minutes to thicken if necessary. Spoon into 6 non-stick (I spray with pam) muffin tins. Bake 25-30 minutes at 350 degrees.

kdog41, can I use soy protein instead of protein powder? What exactly is protein powder? Is it whey protein?

I imagine you could use soy but I don't care for it. Protein powder can be purchased at any drug store, health food store or even Netrition. It's what the body builders use on a regular basis. Just make sure you get one with low carbohydrates as some of them contain high amounts of sugar. I buy Designer Whey which is pretty low in carbs.

This one takes quite a few ingredients, but it is the best LC baking recipe I have tried. I make some little mini muffins and give them away to LC'ers at work and they are amazed that they are LC.
FLAX ALMOND MUFFINS 1 c. flaxmeal 1 c. almond flour 1/4 cup flaxseed 1 t. xanthan gum 1 c. whey protein powder 1 c. splenda 2 t. baking powder dash of salt 2 t. cinnamon mix all dry together wet 3 eggs beaten 2 t. almond extract 1 1/2 sticks butter, melted Mix all wet and let thicken. Mix the dry and wet ingredients together well. Spray muffin tin with non-stick spray Bake in a 350 degree oven for 30-35 minutes

I love Dobie's muffins, but I bet soy would ruin the taste. I use either Designer PP or Any Whey natural pp from RiteAid. I make them with banana DaVinci's in place of the Splenda, so I can cut the extract in half and increase the PP and baking powder a little.
Those almond muffins sound interesting though. |

well i've tried 3 recommended here - all are good - here are the main differences i see
dobie's - need to use protein powder spongebob - good - also very little oil and making them in a loaf pan is quick and easy kim's - a little bland - but then i left out the cinnamon because i don't like it - good texture though if you are definitely making muffins - spray the heck out of the pan and remove as soon as done, otherwise you'll never get them out. I would recommend all 3 but my personal favorite is spongebob's angela |

Here is my slightly tweaked version of the Dobie Muffin...I can't even remember what I changed anymore. I know quantity for sure. I have made them many many times. They are very good, but I have not tried LindaSue's either.
Dobie Muffins 1 1/2 cup ground flax seed 3/4 cup protein powder 1/2+ cup granular Splenda 1 tablespoon baking powder 1 tablespoon cinnamon or 3 tablespoons cocoa 3/4 teaspoon salt 1/4 cup oil 3 eggs - beaten 1 1/2 cup water 1 tablespoon vanilla - or flavor of choice 3 ounces chopped nuts Mix together dry ingredients Mix together wet ingredients Blend together, add nuts and let sit for a few minutes to thicken if necessary. Spoon into 12 nonstick muffin tins. Bake 20-25 minutes at 350 degrees. Approximately 2-4 carbs per muffin. Depends upon choice of nuts, how much Splenda you use, how many carbs in protein powder and flavorings. Some helpful tips: 1. Grind your flax seed fresh. 2. Be sure to use very fresh baking powder. 3. Try to find the lowest carb protein powder. You may use: plain or vanilla soy protein powder or may be called soy protein isolate powder (0 carbs) Can be found at Lakewinds or GNC. whey protein powder Atkins Bake Mix (this will add a few carbs) shake mixes can be substituted also. DO NOT use soy flour! 4. Some people like to add an extra egg and another tablespoon of baking powder. It makes them lighter and fluffier. I prefer a denser muffin and do not choose to do this. 5. Batter should be thick, but still pourable. If it gets gloppy like oatmeal, add a little extra water, so they will bake up moist. 6. Do not over bake. Muffins will get dry. 7. Invest in a good non-stick muffin tin. They literally fall out, with almost no cleaning. You won’t regret it. 8. Muffins freeze beautifully. 9. Great to take with while traveling, or a day out.

Thanks everyone! I tried Linda Sue's muffins. Very tasty. Mine turned out kinda short. But otherwise they look and taste like a yummy muffin! Next I'll try Dobie's and then Spongebob's. Love this WOE!

My favorite is spongebobs -- but I've only tried 2, those and the Dobie. They are both good. I've made the spongebob as one large loaf, 3 small loaves or mini muffins and all came out excellent. I actually prefer the small loaves or mini muffins because it's easier to know they are done. The big loaf sometiems seems to take forever to get done in the middle.

Dobie's muffins are great! Also, I've made Kim's flaxmeal muffins and they are wonderful, as well. I use whey protein powder in my Dobie muffins. Good luck.
