Beachgirls cheesecake question
I made it before and it was yummy but had a problem with the water bath. I made sure I had it covered really well, but it was kinda of soggy.
Can you make it without the water bath? Thanks! |

I'm going to say yes, but you'd need to be careful with it so it doesn't burn.
I personally detest using a springform pan, because even if it doesn't leak, it still forms condensation, which ends up leaving water in the bottom after baking (gag)...SO, I just started making it in a plain old cake pan, and it's fine. Just be sure to spray the pan with pam first so the pieces will come out easier. I DO use a water bath with the cake pan, and it's super easy and just as good. (Note....this isn't how I'd make it for company, because it can tear up a little--at least with the first piece out of the pan) Also...I make this in oven-proof coffee mugs most of the time, especially if it's just for me. That gives me some portion control, and I can bring it with me to work for breakfast. |

You can also put the cheesecake on a higher rack and the water bath on a lower rack.
It does suck when water gets in your cheesecake. |

After much trial and error, I wrap the springform pan 3 times with foil. I put much less water in the pan around it than I used to, just a little less than 1/2 inch. I bake my cheesecake over night. In the morning there is hardly any water left.

Spend the money and buy a decent "glass bottom" springform pan. A few good ones are from Kaiser and Frieling. The other thing I do is buy the heavy duty aluminum foil which is wider. This allows me to use one piece of foil to wrap the pan in. Otherwise, you need two pieces of the regular size and you stand a greater chance of seepage.
