Celery Soup anyone?
Yes, I know, it sounds weird but oh my.
I just made this and it turned out extremely nice 2 Knorr chicken stock/bouillion cubes made up with 1.5 pints water 1 large pack of celery, chopped finely. All of it, including the leaves. 2 fat cloves garlic, chopped 4 spring onions/scallion, also chopped 1 small can coconut milk or you could use heavy cream I think. Ghee, butter or olive oil Saute the spring onions and the garlic. I used ghee as it has such a lovely buttery flavour. Add in the celery. Stir until well coated and then leave to sweat on a low heat for about 15 minutes. Add in the stock. Season well with salt and pepper. I added a touch of onion granules as well. Simmer until the celery is soft all the way through. Leave to cool a bit then liquidise. You can strain it to get rid of any 'stringy' bits but I'm not fussed. Whisk in the coconut milk and serve with grated parmesan cheese. I'm taking this to work for lunch tomorrow. Rar for home made soup!

Yum! I love cream of celery soup! Haven't had any in ages. I used to like just a dash of sherry in mine. Was it very thin because of no flour, or did blending it smooth give it some thickness? Do you taste any coconut flavor? I'm not sure I'd like that. I might use the Carb Countdown milk instead of coconut milk. I'm going to try it this week. Thanks Lisa!

It's very thick actually. The blending seemed to do that. You can't really taste the coconut, it's just creamy. I might add lots of parmesan to it as well. Oooh or you could just blend in cream cheese. Yum!

I've copied this one down and I happen to have a can of coconut milk gathering dust in the pantry. Lisa, how many ounces are in your coconut milk there? My can has 400 ml or 13.5 ounces. This sounds great.

My can is a small one, it says 270g on the label. Hope that helps! I just checked the soup and its still thick and creamy looking after sitting over night, no separation. ![]() |

Isn't that a little odd that they labeled it by weight rather than as a liquid in ml's? I have no idea how to convert that from grams to fluid ounces. I have a conversion program, but it won't go from dry weight to fluid measurements. Would you guess that there's maybe 6 ounces in the can?

I would say so yes. Probably about 1 cup or a little less. I wouldn't worry about it though, just add until you feel it's as creamy as you want it.
I had some last night with fresh grated parmesan...yum! |
