Baked Cod with Lemon Crumb Topping

I made this for dinner and it turned out really nice! You could probably use almond meal instead of bread

Baked Cod with Lemon Crumb Topping
Serves 4/4.5g carbs each
1.5lbs cod fish fillets
2 slices light whole wheat bread(7g carbs per slice)
1/4 cup grated parmesan cheese(1g carbs)
2tsp dried parsley (1g carbs)
1tsp lemon zest (1g carbs)
1/4tsp salt
1/8tsp pepper
2T olive oil
Additional salt and pepper

I take the bread out 2 days ahead of time and stick it in the refrigerator, uncovered, to dry.
Preheat oven to 400f. pour 1T olive oil in a shallow baking pan, big enough to hold the fish without crowding.
Use the additional salt and pepper on the fish and place in the pan.
In a food processor, tear dried bread and add remaining ingredients except for olive oil. Pulse to make a crumb mixture.
Sprinkle crumb mixture evenly over fish and drizzle remaining olive oil over the topping.
Bake, uncovered, for 15 minutes or until fish flakes easily and the topping is browned lightly.

Tilapia, flounder, salmon even -but adjust the cooking times according to the thickness

Dottie,

Does this make a fairly dry fish? I have a really hard time getting fish in my diet. (Even though my DH is an avid fisherman and we spend lots of time on the coast.) I had some pretty good blackened tilapia at the local cafeteria the other day with some kind of garlic butter. It's the closest thing I've come to fish that isn't fried. This looks great, and your recipes are always so reliable. Wet fish is a big UGH for me.

I was thinking.. if the fish is wet(some frozen ones just thaw soggy), you could probably put a little rack on the pan, then put the fish on the rack(just drizzle it with olive oil first)then it would be totally out of the pan, so any real wetness would drip off
