Mexicali Ground Beef and Cabbage Pie
1 head cabbage - finely sliced 1 cup water 1 pound ground beef 2 tablespoons homemade taco seasoning mix 2 eggs 2 tablespoon cream 2 cups shredded Cheddar cheese Salsa Sour cream Steam cabbage with water until slightly wilted and soft. Drain well. Brown ground beef, add taco seasoning. Return cabbage to ground beef and taco seasoning. Mix thoroughly. In bowl combine 2 eggs and cream whisk completely. Add 1 cup Cheddar cheese to egg mixture. Pour in egg and cheese mixture in bottom of 9x9 casserole. Spoon on the cabbage and beef mixture press down slightly to condense meat. Sprinkle remaining cup of Cheddar cheese on top. Bake at 350 degrees for 20-30 minutes or until eggs on bottom are cooked and cheese on top is melted and slightly crispy. Let rest for 10 minutes before serving.

I have made this a couple of times and we really like it. We like it a little hotter so last time I added a can of Rotel tomatoes with green chiles (the original variety) and it was even better.

Hey, Josie, I didn't mean to say it was BETTER than your original. We are just pepper bellies! I also think this is one of the best recipes I have made with ground beef, and it is very economical.
Thanks, Polly |

Ohhh, I don't know ...This thread is 7 years old, so I don't know if the poster is still here at LCF. I hope so though...
P.S. ...just checked and it seems that NorthernNisse is still posting here. Maybe we should PM and ask her. Last edited by Eliza_Jazz; 02-09-2011 at 03:58 PM.. |

I tried that recipe many years ago and for some reason I only gave it 2 stars. I have no idea why because the ingredients all sound great. I must not have had my digital camera back then because there's no photo. It was like a crustless quiche.
SUE'S MEXICALI GROUND BEEF AND CABBAGE PIE I was inspired by the recipe to create my Cabbage Roll Pie, so maybe it looked a bit like this: ![]() |
