That's not a lot for 2 people. I think I would use if for an appitizer, just boil it for shrimp ****tail. Serve with some kind of dipping sauce.

My favorite is also the simplest!

Just melt some butter, and toss in the shrimp. When they are nearly done, I add a couple tablespoons of lemon juice. If you want to "kick it up a notch", add a few tablespoons of Frank's Red Hot to the pan instead of the lemon juice.

I'd serve with asparagus, since they both love the lemon butter, or some baked spaghetti squash. If your DH is not low carbing, this is excellent with rice, or a slender noodle, such as linguini.

Sprinkle with a bit of parsley to dress up the look on the plate.

I'm making this for Valentine's day- super good!

This is from Dana Carpender's 500 LC recipie cookbook.

1/2 cup butter
1/2 cup olive oil
3 cloves garlic, crushed
1 lb raw shrimp with the tail still on
1/4 cup dry white wine
1/4 cup fresh minced parsley

Melt butter with olive oil in a heavy skillet over medium-low heat. Add the garlic and stir it around. Add the shrimp to the skillet. If they are room temp they will take 2-3 minutes per side; if they are frozen it will take 4-5 minutes per side. Be careful not to overcook them. Add the wine and simmer 1-2 minutes. Serve garnished with the parsley.

Makes 3 servings, each with 3 grams of carbs, trace fiber, and 31 grams of protein.
