Jennie's Pizza casserole
Ok, this is something I put together last night. It was really good!
Jennie's Pizza Casserole 2 bags cauliflower, cooked 1/4 c. cream 2 eggs 8 oz. cream cheese( softened in the microwave for 20 sec. or so) 1 cube butter (melted) salt and pepper 1 small jar of Ragu Pizza Sauce 1 lb. hamburger9cooked and crumbled) 2 c. of shredded cheese six strips of bacon (random other toppings...green peppers, pepperoni, sausage, etc) Cook and mash cauliflower with cream with hand blender or in food processor. Place cauliflower mixture in the bottom of a lasagna pan. Mix together cream cheese, eggs, and melted butter with mixer until smooth. Pour over cauliflower mixture. Stir a little to combine. Place strips of bacon over cauliflower mixture; Mix pizza sauce and hamburger together. Pour over caukflower mixture and top with shredded cheese. Bake at 350 for about 45 minutes, or until cheese is melted, and warm and bubbly. serves 10-12 |

Is there a carb count on this recipe? Also, can you taste the cauliflower? If you can, it doesn't seem like it would taste that good in a pizza to me.

I didn't get a carb count on it yet. It's not a pizza, it's closer to a lasagna without noodles. The caulflower is creamy, almost like ricotta cheese. I know, it sounds wierd, but its really good.
