Jen, I'd love it if you DID want to post that - being in maintenance, I can afford to have a couple cookies at that carb level - AND I bake for my Mom, who isn't low carb per se but IS diabetic and those would probably be great for HER!

Oatmeal Peanut Butter Cookies
OATMEAL PEANUT BUTTER COOKIES These cookies are great directly out of the freezer or refrigerator. They could make a good spice cookie (maybe use almond butter). Other ideas: add snipped raisins or sugarless chocolate chips. 1 cup peanut butter 1/4 cup butter, melted 1/4 cup granulated erythritol 1 Splenda Quick Pack or equiv. 2 eggs 1 tsp vanilla extract 1 1/2 cups minute oats 1/2 tsp baking soda In food processor, combine peanut butter, butter, erythritol and Splenda (or equivalent of 1 cup sweetener); process well. Add eggs and vanilla; process at low speed, and then high speed for at least 3 minutes to help the erythritol dissolve as much as possible. Add oats and baking soda; process until combined. Drop by heaping teaspoonfuls onto ungreased cookie sheet. Bake in 350°F oven 8 min. Leaving the cookies in oven, reduce heat to 300°C and bake another 6 minutes. 24 cookies, 4.5 g carbs per cookie (maintenance level recipe) Last edited by Jennifer Eloff; 11-01-2009 at 03:33 PM.. |

Oh Jen, those look SOOOO YUMMY! Thank you for posting the recipe - I'm gonna make those next time I'm in the baking mood, which won't be long since my pumpkin spice bread is gone now!

Wow Jen, those look wonderful!! I love your plates too! I'm busy with my triple peanut butter brownies for awhile, but am definitely keeping this recipe.

I need to be careful with many foods that resemble the real thing. I tried a couple of the bread recipes and binged on them as I would "real" bread. But, that is just me. You may have a different experience. Hence, the bread recipes were good or else I wouldn't have had a problem LOL.

Hey, Tweaker Geek - that Victorian-style tea set was given to me by an older lady, who kinda sorta adopted me as her daughter. She has since passed away, but I always remember her, when I bring them out. They are all different and then I have a teapot with sugar (Splenda!) bowl and creamer which my husband bought me years ago. - Royal Albert Fine Bone China (Old Country Roses). I love playing with that whole tea set and people feel special when I serve them tea using it.
![]() Vli, I do understand. Congrats on your weight loss success! It's good that you know yourself so well. I sometimes will eat too much of my baked goodies too, but then I usually reign myself in, and have a better day within a day or two - and it cancels out. |

Jen - I have a set of china with a rose pattern. Now that you've mentioned serving guests tea in the pretty cups makes me want a cup of tea in mine. I usually just put a tea bag in a mug and use my single cup coffee maker for the hot water. I have some pretty teapots too, just too lazy to use them I guess.
