batter dipped fish

I have taken some cod out for dinner tonight and want to try doing a batter dipped deep fryer thing. Any suggestions?

This is from Sherrilee (sorry about the spelling)

Here is one I found by doing a search:

1 8oz Pkg cream cheese
3 eggs
3 tsp Splenda
1/4 cup Atkins Bake Mix
1/2 tsp baking powder
1/2 tsp vanilla
1/4 cup buttermilk

Beat cream cheese with mixer until blended smooth, add the remaining ingredients and let sit for 5 minutes before using. Preheat non stick pan to med/high heat. Spray pan with a light coat of butter flavored non stick spray and pour in pan about 3 tbps of mix. I made them about 5 to 6 inches across. Be sure to let bubble up all over just like the flour pancakes before turning!

Eat your heart out Aunt Jemima, these are as good as the real thing!

Makes 10 large pancakes @ 1.7 carbs per pancake

Make your own Atkins Bake Mix

1 cup soy flour
2 cups soy protein isolate
2 tablespoon baking soda
1 teaspoon salt
2 tablespoons Splenda

Sift together then store and use as you would Dr. A's. It's much cheaper and things come out about the same.

3 carbs per 1/2 cup serving

making the connection

I was trying to make the connection between pancakes and cod and was having trouble BUT while doing a search for "batter for deep frying" (well, it does sound good and I need a supper idea and I do have cod in the freezer )...anyway, I found that someone posted about using pancake batter to deep fry other foods so THEN it made sense! <patting self on back>

Let us know what you did use and how it came out.

I ended up using 1/4 cup of the Atkins Bake Mix, 1/4 cup of the Atkins pancake mix, 2 tbls. of parmesan cheese, one egg, two tbls. of heavy cream and a splash of water. Looked great, haven't eaten it yet. Waiting for husband to get home from work. The only problem I had was the bottom layer of the fish kept sticking to the basket of my fryer. Kind of new at this deep frying, any suggestions of what i was doing wrong? Other than that I think it is going to be pretty good! i will post a reply after we have tried it. Also tried doing some of the fried spinach that i saw posted someplace else. Thought as long as I had the fryer out might as well put it to use. That was tasty in a different kind of way.

You know what I did last night? I bought some Walleye (sp?) I cut them in half, dipped in seasoned egg batter, patted crushed French's fried onions, and deep fried in cannola oil, sprinkled pepper jack and monteray/colby jack cheese and boy was that good!!

I did not use too much fried onion, cuz, I think 2 tbl spns are 3 cards.. I crushed them up real fine and patted them on the fish... Talk about crispy, crunchy and beautiful flavorful flaked fish.. Oh! I was giving praise to the creator! (LOL)

I'm doing that again....

Ok, so I need a good from scratch recipe for a mushroom creame sauce, I am thinking of for fish chowder.. I no like clams...

When I use my fryer for battered things, I don't use the basket. I drop the food in and then retrieve it with tongs. I have not had anything stick to the bottom of the fryer yet.

Thanks, by the way, I now have a craving for Fish n Chips!
