Excellent Appetizer for anyone.
Hi There,
This is an excellent low carb appetizer that you could feed to anyone... 4 red peppers olive oil 2 cloves garlic (sliced) pesto 4 large sea scallops parmesan slice peppers in half and take out seeds and membrane. Put tsp of olive oil and some pieces of garlic into each half and bake in the oven for 40 min @350F. Take them out. Slice the sea scallops in half so you have 8 discs. Put a scallop in each pepper, and add a tsp or so of pesto. Put back in the oven for 7 min or until the scallops are cooked (they cook fast and if you overdo them they are elasticy). Top with parmesan. Yum, yum and very fancy on the plate. Eleanor |
