Sherrie's Apple Pie **Photo Included**

Sherrie's Apple Pie


Filling: 1 can of Lucky Leaf Sugar Free Apple Pie Filling

Meringue Crust:

6 egg whites
1 1/2 teaspoon cream of tartar
5 tablespoons Splenda
1/2 teaspoon vanilla extract

Beat egg whites with cream of tartar until almost stiff, then add the rest and beat to stiff peaks.

Spray a 9" pie tin with nonstick spray and put 1/2 meringue mixture in it, spreading so you have it about even all over and up to the sides like regular pie dough.

Bake in a preheated 350 degrees for 10 minutes or until lightly gold and some can still be white.

While the crust is in the oven pour 1 can of Lucky Leaf Sugar Free Apple Pie filling in a small sauce pan with 1 tsp of allspice or cinnamon and bring to a simmer. Add the hot filling to the crust as soon as you remove from the oven and spread evenly. Pour remaining crust mixture over the top of filling and be sure that no filling show's through.

Return to oven and continue cooking until a golden brown crust is visible.
Makes 10 slices @ 5 carbs per slice.

WOE: Drastically reduced carbs.
If you can't find the lucky leaf, you can make some LC zuchinni apples, thicken with xanthan gum and use that to fill the pie. That would lower the carbs, too. Awesome, Sherrie, LC and lower cal!

I just posted on your Cherry pie thread before seeing this one that Walmart now has a Great Value brand splenda sweetened Apple Pie filling for $1.00 per can.

Sherrie, your recipes are the greatest! I will try your meringe crust tonight. Keep up the good work.

I made some zucchini crisp..It is good..Also chayote squash is
very good as apples...

I'll find you the post..


4 medium zucchini or chayote squash..peel and slice
3 packages of Sugar Free Apple Cider Mix
1/2 tsp. cinnamon
2 Tbs. splenda or more
Water

Peel the zukes and cut them in half long-wise and take out the
seeds with a spoon..then chop up the zukes..like you would apple chunks. In a medium saucepan, empty the 3 packages of mix
and add about 1 cup of water to mix..add splenda and cinnamon
and then the zukes. Put enough water to just cover the
zukes and then cook over medium heat for 45 minutes until
the liquid is almost gone...but there is still some in the bottom
of the pan.
Pour zukes into sprayed small casserole dish.

Note: If I were doing this for a pie..I would thicken the liquid with
guar gum or xanthan gum...

Yay!

So glad to see this recipe. I have had both the cherry and apple fillings for a while, just waiting to come across a recipe. Kroger and Walmart have both the apple and cherry pie filling.
