Mushroom Pizza Question!
All this talk about stuffing mushrooms caps and pizza made me go out and buy some beautiful portabellas that I intend on stuffing tonight with ricotta, tomato sauce, and mozzarella.
Here's my question: is there any way that the bake time (30 minutes at 425) can be reduced? I'm always in a hurry and I don't have time tonight to bake them for a half hour - do you think it would turn out the same if I sauteed the mushrooms first, topped with ingredients, and broiled? Is it possible to microwave them to soften them up? If anyone can help me out with this, I'd really appreciate it! Thanks! -Liz

sauteeing them first is probably a good idea. That should shorten the baking time. Saute on both sides, then add your stuffing, and broil for a few minutes until the cheese is melted, browned and bubbly. It should be delish!

Thank you so much for the idea! I sauteed them first and popped them in the oven - even my non-low carbing friend liked them!
