Chicken Soup for the Soul
Chicken Soup of the Soul
1 whole chicken 2 cans of Rotel tomatoes green onions califlower squash ( any kind except winter) fresh or frozen green beans bell pepper red onion bay leaves ( 2 or 3 ) thyme poultry seasoning garlic powder I put the chicken in a large stock pot. Fill it about half way. You may want to start this by using store bought chicken broth instead of water for more flavor. Put in the tomatoes, onions, bell peppers and seasonings. When the chicken is done set aside and let cool. Put in your veggies. When chicken is cool. Bone it and put in soup. I make a big pot of this in the winter and eat it for lunch everyday. I don't know the carb count but we can have everything in the soup. I had some for supper tonight and it is a comfort food for me. Hope this is a comfort for all my friends on the board who are feeling under the weather. Love to my friends, __________________

I love soup and if I waited for soup weather in Texas I would be out of luck. I eat soup year round. I forgot the salt and pepper. I like a lot of pepper in mine and will also put in a little red pepper to clear the sinus.
