Football Tailgating! What To Make L/C??

In a few weeks, DBF and I are having a football tailgating party. Whereas in the past we would oink on anything available -- burgers, veggie burgers, ziti, etc...this year we are obviously a little more conscious!!!

I'll probably make a real lasagne for the non-low carbers (besides, it's back by popular demand amongst my friends, I'm pretty famous for it )., but besides that I figure stuff that's LC -- salad w/ romaine lettuce, pecans and blue cheese (it's awesome), big pan of sausage & peppers, DBF will be grilling steaks, burgers, chicken...there will be rolls for the non-low carbers.

Does anyone have suggestions for whatever has worked for them? Stuff everyone, low carb or no can enjoy?

Also -- we make tons of grilled veggies with olive oil and garlic...just in case anyone would recommend that . Red peppers, green peppers, yellow peppers, eggplant, zucchini...

anyway, looking for more feedback, I appreciate it!!!

Here are a couple of popular tailgating recipes you may wish to consider...from a friend... ;-)

Stuffed Camel

1 medium Camel
3 lambs
20 chickens, roasted
150 eggs, boiled
40 kilos tomatoes
salt and seasonings

Stuff eggs into tomatoes, stuff tomatoes into chickens, stuff chickens into lambs, stuff lambs into camel. Roast until tender. Serves 150

=============

Elephant Stew

1 Elephant
salt and pepper to taste
2 rabbits optional

Cut elephant into small, bite-sized pieces. this should take about 2 months. Add enough brown gravy to cover. cook over charcoal fire for about 4 weeks at 465. this will serve 3,300 people, If more are expected, two rabbits may be added, but only do this when necessary, as most people do not like to find hare in their stew.

baked jalapenos...


cut jalapenos in half, (get those seeds out of there)

lay out halved jalapenos and stuff with cream cheese

cut slices of THIN bacon in half and wrap each jalapeno slice with a half slice of bacon

put in 350 oven for 45 minutes to 1 hr.. (depending on your oven)


you want the bacon crispy, but you don't want the cream cheese to bubble out... so you might have to regulate the 350 to how hot your oven cooks.

GREAT TASTING!!

You can also chop onions REALLY, REALLY fine and mix in the cream cheese before stuffing.. that is good too.

IT as good as any high carb, breaded jalapeno popper and really low in carbs too!!


edited to add, I cook these in those aluminum pans (that I can just throw away.. hahahah) with just the slightly raised sides

Had a similar japalano thing...japalanos stuffed with a piece of hot italian sausage (not sure if it was cooked previously) but it wasn't a bit greasey. The folks at the party downed those pretty quickly. They were hot but spicy! I haven't attempted them but have my ingredients for tonight!

LOL @ locarbman!!! Very cute!

Didn't see any desserts listed for the tailgating menu...Didi (over on LLVLC website) posted an AWESOME recipe for Chocolate Coma Cookies. I've made them and they are wonderful...might want to give those a try, too! Link is below...
