any recipes for scallops
i can not stand the taste and though of any more plain scallops. i do not really like bacon or meats wrapped around. do any of you have any tasty low carb ideas? i do not even know how to cook the scallops properly.

Well, I don't know how you have been cooking them, but here are a couple of really quick and easy ideas.
Heat some olive oil in a saute pan, add some minced or crushed garlic, a little pepper and what ever other herb you have you may like (parsley is always nice, a touch of thyme) saute the scallops over medium high heat until translucent. You can also skewer them and let them marinate a bit in garlic, herbs and a little olive oil. Grill and enjoy. You could put them in a cream sauce, a modified version of Coquilles St. Jacques, but I'm guessing that goes a little beyond quick and easy! ![]() |

Throw it in with some sausage or kilbasa and shrimp for jambalaya. (not as hard as it soiunds) Just get a seasoning packet form the market. And they soak up the flavor and become very tender not so chewy.

Cook in batches if necessary. 1 pound sea scallops, rinsed and patted dry 1 teaspoons salt 1/2 teaspoon cayenne pepper 3 tablespoons butter 2 cloves garlic, pushed through a press 2 green onions (white part only), chopped 1 tablespoon fresh thyme or 1 teaspoon dried thyme 1 1/2 tablespoons fresh lemon juice 1 teaspoon grated lemon peel 1. Sprinkle scallops with salt and cayenne. Heat butter in a large skillet over medium-high heat until it bubbles and begins to brown. Add garlic and green onions; cook, stirring, 1 minute. 2. Add scallops, thyme, and lemon peel to skillet. Saute scallops 2-3 minutes per side, until lightly colored and cooked through. Drizzle with lemon juice and serve immediately. [/color]
