Taco Seasoning?
Anyone have a taco seasoning recipe that is close to Old El Paso or even Taco Bell? I'm dying for taco salad...

I usually use a spice mixture from Penzey's (you can order online) called Adobo seasoning, or you can make your own from cumin, chili powder, a little oregano, salt, and maybe a bit of cayenne. Add some minced onion and a couple of cloves of minced garlic as you're cooking, too.
I think I saw a more complex recipe on the boards a long time ago - it may have been one of Dottie's? Priscilla |

Here is Dottie's. I keep a nice jar on hand at all times
Taco Seasoning Mix 3 tablespoons chili powder 1 tablespoon garlic powder 1 tablespoon onion powder 2 teaspoons ground cumin 2 teaspoons salt 1 teaspoon black pepper 1 teaspoon red pepper 1 teaspoon oregano 1/2 teaspoon paprika Measure and mix well. Makes enough for about 5 pounds of ground beef Edited to add: 30g carbs total - 10g fiber=20g net carbs or 4g carbs per 1/5 of total. I think it makes about 7 Tablespoons total. |

Old El Paso has started making their Beef and Shredded Chicken already seasoned in ready to eat bowls in the meats section at Kroger, I think they are fairly low-carb. I can't remember the carb count, but I had a bowl when I started this woe and I ate some and it never threw me out of ketosis. Might be something worth checking into.

here's another one
adapted from www.topsecretrecipes.com
Lawry's clone 1 oz. taco seasoning packet 1 teaspoon chili powder 1 teaspoon paprika 3/4 teaspoon salt 3/4 teaspoon minced onion 1/2 teaspoon cumin 1/4 teaspoon cayenne pepper 1/4 teaspoon garlic powder 1/4 teaspoon granular splenda 1/8 teaspoon ground oregano 1. Combine all of the ingredients in a small bowl. 2. To prepare the meat filling for the tacos as described on the original package instructions: "In large skillet, brown 1 pound ground beef until crumbly; drain fat. Add spices & seasoning and 2/3 cup water; mix thoroughly. Bring to a boil; reduce heat to low, and cook, uncovered, 7 to 10 minutes, stirring occasionally. |

This one's really good:
SEASONING FOR TACOS 1 t. chili powder 3/4 t. paprika 3/4 t. cumin 1/2 t. onion powder 1/2 t. salt 3/8 t. garlic powder pinch cayenne Combine and add to 1 pound browned and drained hamburger. Add a little water, if desired. This will be drier than taco meat made with a commercial mix due to the lack of thickeners. It tastes just as good as the store bought kind and is a lot cheaper to make. Makes enough for 1 lb. hamburger (4.5 carbs for the whole batch)(4-6 servings - 1 carb each) A package of Taco Bell taco seasoning has 18 carbs and Old el Paso brand has 30 per package. I mix up a bunch of this and put it in a small jar. I just measure out 4 teaspoons of the mixture per 1 pound of hamburger. See recipe below. This recipe makes enough for about 6 batches of taco meat: 2 T. chili powder 5 t. paprika 4 1/2 t. cumin 1 T. onion powder 1 T. salt 2 1/2 t. garlic powder 1/8 t. cayenne Mix and store in a small jar. Mix well before measuring. Makes 24 teaspoons. 1 t. = 1 carb 2 t. = 2.5 carbs 3 t. = 3.5 carbs 4 t. = 4.5 carbs 5 t. = 6 carbs 6 t. = 7 carbs 8 t. = 9.5 carbs VARIATION: I add a tablespoon or so of Taco Bell restaurant-style sauce to it to my taco meat after draining the fat and stirring in the seasoning. It made it a bit more like it was made with a taco seasoning mix. It was juicer and held together better. The carbs in Taco Bell sauce are minimal, but be careful of the Ortega brand taco sauce. It has a lot of sugar in it. |
