Fried green tomatoes

I don't know about those of you up north but down here in Bama country we love fried green tomatoes. When I was at the local farmers market I picked up some green ones to try out a new recipe and it is great. Hope you like it....by the way, I don't know if anyone here eats tomatoes on this diet, I have always without a problem.

Fried green tomatoes

Pulverized pork rinds (amount depends on the amount of tomatoes you are using)
one egg beaten
sliced green tomatoes

coat each slice in the egg wash and then in the pork rinds. Next, fry in a thin layer of oil. Pork rinds can burn quickly so keep a good eye on them and turn them often.

This also works great on zucchini. serve with a side of ranch dressing.

Hope you enjoy it!!!

Green tomatoes are tomatoes that have yet to turn red.

I wonder how this recipe would be using parmesan cheese in place of the pork rinds? I love fried green tomatoes!

Babyjibs, they are just tomatoes that haven't ripened yet.

Most people like them really green, but I perfer them to just be turning, just slightly orangy in color. I love them!

I used cheese

April 2
In answer to your comment, yes, I use cheese, finely grated, instead of the pork rinds. Now I wonder if combining the rinds and cheese.......hmmm think I'll try that. I love fried green tomatoes, in fact my son raises extra tomatoes so I can enjoy them all summer. The entire family thanks I am crazy!!!!!! They won't even try them.

I like to combine 1/2 parmasan and 1/2 ground almonds for other things like chicken. I bet this would be yummy on the green tomatoes.

OH THANK YOU!! lol I was just wondering the other day how I was gonna have my fried green tomatoes this year! We have a good sized garden each year & ALWAYS have tomatoes & no summer is complete without frying some green ones....mmmmm! That sounds like a good alternative... thanks for the recipe!

(And yes some of us "Yankees" eat them too! lol)

I just made these for lunch and I useed Atkins Bake Mix. I beat an egg in a bowl, dipped the sliced tomatoes in the egg, and then coated it with the bake mix. Fried in a little bit of oil.......YUM!

Tasted just like regular flour.

I was wondering if I was going to be able to eat these this summer too... and I just had a thought....Since the tomatos are green would they be lower in carbs since the sugar is part or the ripening?

According to ****** the carb count for green tomatoes are HIGHER! than red tomatoes, but not much more.

Here is the calculation:

1 medium green tomato: 6.27g carbs w/1.35g fiber
1 medium red tomato: 5.71g carbs w/1.35g fiber

I just made fried green tomatoes yesterday. My tomato was a little too orange, but DH liked them better that way.

BTW, the tomato should be a transparent green, just about to turn orange - not dark green and hard.

How thick do you slice them, or is it a matter of preference? I make grilled red tomatoes, topped with parmesan cheese and basil which are yummy, but I like the idea of fried green tomatoes, and happen to have some in my basement - a lovely gift from a friend.

I guess it's preference, but I slice them about 1/4" thick and cook them in butter on low heat, so they get soft and the coating doesn't brown too much. Your fried red tomatoes sound really good, I'll have to try them.

I used a medium tomato and got about 5 slices from it, so they were about 1/4" thick.

Yummy! I'm heading over to the folks garden today for some more goodies and green tomatoes are on my list

How about a combo of almond meal, pork rinds and parmesan?
The reason you use the green tomatoes is because they're usually firmer and hold up better when cooked. But if you can find those big red slicers that are really firm, they work too!
