The fluffiest squash casserole

If you love squash casserole, you will love this - my cousin Helen brought it to the last family reunion, and everyone raved about it - I demanded the recipe right then and there! Try it, it's great!

Cousin Helen's Squash Casserole

6 yellow squash, cut up
1 large onion, chopped
at least 2 eggs
1/2 to 1 cup sour cream
1 to 1-1/2 cups grated velveeta (or chef's style) cheese

Cook squash and onion (without water - very important!) til tender. Mash squash and onion into a pulp, and add all other ingredients. Put in casserole dish (spray with pam or grease lightly with butter) and bake at 350 degrees til bubbly (about 30 to 45 minutes).

You can bake or roast the squash and the onion. It will give it a nice nutty flavor, expecially if you cut them in half and smear the cut side with olive oil. Place cut side down on a baking pan, and roast at 350 until tender. You can do the same thing with the onion.

Is yellow squash like zuchinni but yellow?

I thought most squash except speghetti and zuchini (summer) were high in carb.

I thought the carb counts looked pretty high, so I checked the individual ingredients:
1oz velveeta is 140 cals; 5.25g carbs; 8.75g protein
1 'medium' yellow squash(130 grams by weigh or about 1 cup sliced) is: 24.7 calories; 5.25g carbs/2.47g fiber; 1.22g protein
1 'large' onion (122g by weight; 2/3 cup diced) is: 41 calories; 9.49g carbs/1.98g fiber; 1.27g protein
Sour cream varies by brand...

This sounds wonderful. I love yellow squash..However,
what cheese could we substitute for the Velvetta??? The nice
thing about Velvetta is that it melts so well..but the bad thing
is that it's carbier than cheddar..Maybe a finely grated cheddar
would do mixed with some mozarella??? or jack?

I don't eat most squash because it is quite carby. . However, if I were to make this recipe, I'd be inclined to substitute the Velveeta with 1 cup cream cheese and 1/2 cup cheddar, or 3/4 cup each.

Bernie: It's also called "crookneck" squash. It's an oddly shaped yellow skinned(soft skin -not like spaghetti squash)squash. Kind of looks like a partially inflated balloon with an oblong, roundish shaped body and a "neck" that's crooked at an angle
