Here's a Good Curry Chicken Recipe!

Just made this--Oh so good, and I get lots of my veggies in!

Red Curry Paste (find in asian market)

6 Chicken Breasts

1 Can real unsweetened Coconut Milk (with cream) find in asian market)

2 Zuchinnis

handful of large snow-pea pods

1 head of Broccoli

shredded unsweetened coconut

Feeds about 4 (with lots of leftovers!:-)


Cook the chicken breasts in a spoonful of curry paste (to taste) and a little bit of coconut milk. Once cooked, add the veggies, the rest of the coconut milk more curry paste, to taste. Cook down until there is no more liquid.

Normally this would be served with rice--so if your family wants it, let em have it (Don't cook the sauce all the way down in this case--save some for their rice)--But it's just as good without the rice!!!! Sprinkle with coconut just before serving.

Very easy to make, took me about 20 min--would take less if you use prechopped chicken and veggies though! cooks all in one pan, no messy clean up! Its' very satisfying and tastes just as good the next day!

I printed this recipe out ages ago and FINALLY made it tonight...HOLY MOLY!!! Is this recipe ever good!!!

The only "tweaks" I made was when I sauteed the chicken, I added some fresh minced ginger and garlic. Than I added a bit of salt and two packets of Splenda when I added the rest of the coconut milk. Just before serving, I sprinkled some fresh basil on top.

I served this on a bed of "rice." Rice being, fresh cauliflower that I ran through the "shred" attachment of my food processor, than just steam it up and put the curry on top...AWESOME! It soaked up all the yummy coconut curry sauce and it tasted almost EXACTLY rice!

I made mine pretty spicy, but my cold Mic Ultra "cooled" things down.

Even if you are not a curry fan, this is a must try!

This sounds great. I think I will give it a try. I need something new and different and I love coconut. Thanks for posting.

If you get a chance could you look on the ingredients of the curry paste and see if it contains any wheat?

I used "Thai Kitchen" Red Curry Paste. The ingredients are: Chili, Garlic, Lemon Grass, Galangal (?), Salt, Rhizome (?), Onion, Pepper, Lime, and Peanut Oil.
