1 large cauliflower, head
1 cup heavy cream
3 ounces cream cheese -- diced small
1 cup shredded cheddar cheese
2 teaspoons dijon mustard
1 each salt and pepper -- to taste

Clean cauliflower and chop into small pieces. Boil in salted water for 5 minutes or until it starts to soften. Drain very well without mashing.
Heat cream in a small non-stick saucepan. Once the cream starts to simmer slightly, whisk in mustard and small diced cream cheese. Whisk until cheese melts, then whisk in the cheddar, salt and pepper.
Once it's melted and thickened, toss with the cauliflower, spoon into a microwave safe casserole and microwave on high, uncovered, for 3-4 minutes until bubbly and the cauliflower is tender. Serve immediately.

This is much better than the Atkins Mac and Cheese. Less carbs.

I made this tonight with Darielle lowcarb pasta..instead of
cauliflower..Am making Potato salad tomorrow night and wanted
to save my cauliflower..It was very good...I put in more cheese
as I love things cheesey.

Try it using 1 cup bottled alfredo sauce(instead of the cream)and 1 cup mild cheddar cheese! It was really, really good :)

I was a little skeptical about the cauliflower buy O M G this was sooooo delicious! i doubled the cheese sauce mix, and it came out like a chunky cheese-potato soup, FABULOUS! I like this even BETTER than real mac-n-cheese, which is saying a lot since that was one of my fave foods. WOW!

Tried this tonight... it was DELICIOUS! Only one problem, there is no way I can consider that 6 servings!!! I could eat half of the bowl in a second!

:laugh: I try not to cook it when the kids are going to be here. I think they associate the smell with that of a skunk! :rofl:

Awesome job. Another taste I miss. I'm going to try it with cottage cheese instead of the cream cheese. I've had mac and cheese with cottage cheese before and it amazed me. Thanks for the recipe!

I can't believe I waited so long to try this recipe. (Some early fiascoes with "fake" baked things soured me on trying to replace carb-heavy foods with low carb "substitutes".)

I finally cooked this last night -- it was *amazing*.

I will definitely be cooking this again.

IMHO fresh cauliflower, steamed in the microwave is the only way to go...much cleaner taste, not skunky at all.

I just got home from Thanksgiving dinner at my in-laws. This recipe was a huge hit. Everyone liked it, even my uber picky brother in law. I didn't have much cheddar so I used dubliner cheese in the sauce, then sprinkled 1/2 cup or so of sharp cheddar on top, a few pats of butter, salt and pepper, and put it in the over til bubbly. It was phenomenal and I think cauliflower is gross so that's saying something. Thanks again!
