Low Carb Tortilla Recipe??

I have been to the recipe room and done an online search and have come up with one recipe to make low carb tortillas...does anyone have a good recipe for low carb tortillas? We like to make our own but don't dare make the ones we used to make. Any recipes would be appreciated!

Hi Dana, I did a google search on 'low carb tortilla recipe' and came up with this one...looks pretty good (might be the same one you found lol):

I get mine from La Tortilla Factory and plan to try deep frying them for chips... ;-)

these are Sherries tortillas

Sherrie's Low Carb Tortillas

Dry Ingredients:

1 cup soy protein isolate (we buy ours at www.bulkfoods.com)
1/2 cup oat flour (Bob's Red Mill)
1/4 cup vital wheat gluten (Bob's Red Mill)
1/2 cup almond flour (we grind our own in a coffee grinder)
1/2 cup whole ground flax seed meal (Bob's Red Mill)
1 tsp baking powder

Mix all dry ingredients together and mix well.

Add to the dry ingredients 1/2 cup oil and blend throughout.

Add, a little at a time, approximately 1 cup of cold water to the mixture until the dough comes together in a ball. Kneed for a few minutes and divide into 15 balls about the size of a gold ball. Use a 2 sheets of wax paper to put the dough between in a tortilla press if you have one to press your mixture into flat tortillas. We roll them out a little more once we remove them to make them really thin.

Fry them in a non stick skillet until you see little brown spots on the surface of the tortilla! Store in the fridge in a sealed container to keep the moisture in.

Makes 15 - 6" round tortillas @ 2.16 carbs each
