LC Hot Cocoa by the Mug
Messed around until I came up with this recipe this morning. Hit the Spot!
LC Hot Cocoa by the mug
3.3 net carbs
1 T cocoa powder (1.3)
1 T Confectioner's Swerve (.8)
1 pinch of salt
1/2 to 2/3 cup super hot water
5-7 drops vanilla stevia
3 T heavy cream, slightly warm (1.2)
8+ eyedropper drops peppermint extract (optional)
Mix dry ingredients in a mug. Add wet ingredients in order given, stirring after each.
Note: The Keurig machines are supposed to make 3.5 oz hot water on the smallest setting and 5.5 oz on the 2nd cup size. Mine makes 6 oz exactly on the 2nd setting. The first is too little, the second is too much water for this recipe. Either pour a tablespoon or two out of the 2nd cup size or go a bit heavy with your cocoa and Swerve. I used Penzey's natural cocoa. Your cocoa may be stronger or weaker.

Thanks Jen . I'm going to try this with coconut cream full fat canned (allergic to dairy). Sounds really good.
