Sausage and Kale Soup

I've been fighting bronchitis and a sinus infection for the past 2 weeks - ugh. Last night was the first time in about a week that I've cooked a real meal. I adapted this soup from the blog A Spicy Perspective. I think this soup is similar to Olive Garden Toscana soup (although I've never tried their version). Anyway, it was warm, soothing, and filled the belly. I'm feeling better this morning (I think it's the soup )

Sausage and Kale Soup

1 tablespoons grass-fed butter
1 small onion, diced
3 garlic cloves, minced
1 pound Italian pork sausage (I used hot)
1/4-1/2 teaspoon crushed red pepper, to taste
1/2 tsp. dried thyme
1 cup dry white wine
1 medium Delicata squash, seeded and cut into medium chunks
1 bunch kale, trimmed and chopped (remove stems), about 5-6 cups
8 cups chicken stock
1/2 cup heavy cream
Salt and pepper to taste
3/4 cup shredded Parmesan cheese

Melt the butter over medium heat in a large saucepan or Dutch oven. Cook onion until translucent; add garlic and cook 1 minute longer. Add Italian sausage; increase heat to med-high and cook and crumble the sausage until no pink remains. (You may drain off any excess fat at this point - I used a locally-made sausage that is pretty lean, so I didn't have any excess fat.) Stir in red pepper, thyme, and white wine. Cook until wine is reduced by half. Add chicken stock, squash and kale; bring to a simmer; cover and cook for 15 minutes. Stir in heavy cream. Season to taste. Ladle into bowls and top with Parmesan cheese.

Good soup, I've made this one and the sausage and pumpkin soup that's kicking around here somewhere. It is soup season!

Oh man that sounds so yummy! I've made a couple different kale soups and will add this one to the recipe box!

I do a sausage and greens soup, too that I love. It's a great combo really.

I make pork neck bone & kale soup. It's so low calorie and yummy. I just cook the neck bones all day w/ onion and garlic and cool it before taking all the bones out, then add italian seasoning, salt, pepper & lots and lots of kale. I could eat on it for days. I will have to try the sausage and kale, it sounds yummy too.

Anytime I see anything from KCSoccerMom or lindaokla I check out your posts.
Both wonderful cooks. Glad the bronchitis is on the way out. Me too, I've been
down with it too. The soup looks as if it is delicious and healing too.
Very close to Olive Garden's, which is my favorite soup when I go there.
It has potatoes but the your delicata squash will take it's place nicely.
