WOE: lower carb/low-glycemic w/portion control
LC pizza yesterday went wrong, 4 lb gain after 30 lost

Can't believe the LC pizza I made yesterday caused my sugar rise and gain 4 pounds. I'm not diabetic but test with new food to see how my body responds. Can't believe what sent it over 100 yesterday and made me gain 4 pounds. I thought I was being so good, made husband French bread pizzas while I was slobbering over it like a dog, then I made me this on one of the very small Mission :
1 Carb Balance tortilla, toasted (4 carbs)
2 T. Ragu pizza sauce (2 carbs in 1/8th cup)
Italian seasoning and granulated garlic (0)
Ground sausage (0)
Mixture of cheeses, mostly mozzarella (1)
Stir fried mushroom (0)
1 t. Black olive, 1 t. Green olive
1 T. stir fried onion, bell pepper (2 at most)
5 Low fat Pepperoni (0 - in 16 slices has 1 carb)
I tried to keep the "pizza" at 10 carbs, and was pretty close, my blood sugar hasn't gone over 100 in several weeks so I can't have this again unless I can tweak it down some. Hope someone can give me some insight as this was REALLY tasty and something I thought would be a great meal when craving pizza.

I would suspect the weight gain is much more related to all the salt than the carbs - can't speak to the blood sugar though! Unless something doesn't really jibe with the listed carbs, that LOOKS good. Sorry it caused you distress!

Have you ever tried NancyElle's Thin & Crispy Pizza Crust? Basically just eggs & cheese in the crust. We love it. It DOES add more sodium though, although I back off the cheese in the toppings when I use this crust.

Thanks! I haven't ever seen that crust in our stores, is it from a recipe here?

I think the tortilla is made with wheat, which can be or should be a no no food.
Drink lots of water to flush out the salt!!

I know, but I've eaten 2 of those 4 carb (small ones) before to make grilled cheese, soft taco, etc w/o any sugar rise or weight gain. Next time I may try the ingredients separately and test. I wonder if the 4 carbs for 1/4 cup of the Ragu was inaccurate on the label. Next time I'll mix the same 2 T. of sauce with some ghee and parmesan and try on 1/2 a tortilla if the 6 carb (bigger variety), add more fat by buttering the tortilla and add some real bacon pieces, and drink a cup of fig leaf tea while preparing the pizzas, and see how that goes. If it still causes a sugar rise I'll know that combo is just too carby for me and come up with something else. :0)

Actually though, I'm pretty sure blood sugar going over 100 after eating isn't unusual at all (and I am referring to non-diabetics). There's always going to be a rise in BS after eating, so I wouldn't worry about it all that much!

I don't know about the weight gain (maybe water weight?) but for the readings, exercise plays a big part in whether they are higher or lower.
